Fish Tacos...Old-Fashioned Cakes...Opening the gift of today...

What's up guys,

I hope all of you had a fantastic Thanksgiving and a great start to the Christmas Holidays last week! I had a blast. I was able to spend time with both sides of my family, which is a real blessing because most years I have to choose a side. I am ready to start cooking for Christmas, and we have put together a Christmas menu that will allow you guys to experience Kairos Delicious Goodness on your tables this year! One of the neat things I came up with is a selection of old-fashioned cakes. I wanted to make my Great-Grandmother’s Chocolate Cake for my Aunt this Thanksgiving. She talks about this cake so often, and since it was our first holiday without my Granny I wanted to do something special. I had a lot of help from you guys formulating a recipe, and the results were fantastic. It never ceases to amaze me that when I try to come up with a recipe to bless someone with it always comes back as a double blessing to me! After making the Chocolate Old-Fashioned Cake I came up with a Luscious Lemon, a Strawberry, and a Caramel Version that are so good it almost makes me cry! My Granny would be so proud. There are plenty of other things to choose from! I’ll post the menu at the bottom.

And speaking of delicious goodness we have renamed the Kairos Buffet to “The Delicious Goodness Express” !! I have been having so much fun cooking different things everyday and the possibilities are endless! The Specials this week are also mouth watering... I have a Fish Taco to offer you guys that I absolutely fell in love with, Kairos Roasted Tomato Soup, The Hamburger Taco, and much more. The Pimento Cheese at Kairos is turning into a phenomenon as I learn new and exciting ways to use it. Try it on a Burger, a Quesadilla (it goes great with the roasted tomato soup!), as a grilled cheese, fried up as an appetizer, or just get yourself a pint to take home! I put it on my meatballs that I made this weekend and they were off the charts good! I hope to see you this week and I can’t wait to cook for you guys!

The last year for me has seemed to be an epic failure from some perspectives. Whenever I’m out and I see people I haven’t talked to in a while I inevitably seem to get the same response. Not from everybody but from the majority. People look at me all sad. Try to say the right words. Tell me it’s gonna be okay. I am polite of course but it all seems to be a bit much for me. I get this gnawing in my stomach...yes we have been through some stuff, so I know that people want to offer comfort, and yes we have lost a lot of money, so I know that is a cause for concern. Is it that people worry about how they would deal with all those situations that give them such reason for anxiety? I’m not sure. I appreciate it but I am ready to move beyond all that. I learned a lesson many years ago from Jesus. My future is not determined by my past. Your future is not determined by your past either, no matter how bad it was or even how good it was. Each day God gives us a very beautiful gift. The Gift is today. Today I can become one step closer to being everything He created me to be, and learn how to tap into all that wealth of potential that He has placed inside of me, and use the gifts and talents He has given me to bring Glory to Him. We can all do that. Everyday of our lives.  No matter what happened 20 years ago, 20 months ago, 20 days ago, or even 20 minutes ago.

The last year for me has been very disappointing, but some of the things I learned through that journey are more valuable than dollars I believe. I think the greatest thing I learned was that bigger is not always better, I've also learned how to tap into my strengths and delegate the things I'm not good at. I firmly believe we were supposed to go to Gardendale, and I believe God has purpose in everything even when I don't understand. That will all be determined in the future I suppose. Right now, where we are with just the Birmingham Kairos, I am more content than I have ever been in my life, and its weird because through all this I have experienced and am experiencing His presence in new ways. Its pretty good stuff! I don’t understand everything. And I don’t have to. There is great freedom in that! No matter where we have been or what we have gone through, Jesus always has purpose and the Ultimate Plan! God Bless you as you trust Him to work out the details!
