Southern/Greek/Italian Menu...Granny’s Rolls...Being the best Me...

Chicken Florentine

What's up guys,

Wow! There is so much going on around Kairos that I don’t really know where to start. The last year has been a very difficult year and at the same time one of the best years of my life! You know.... opening a Kairos Kafe in Gardendale was The worst business decision I've ever made… it was also one of the best things that ever happened to us… Romans 8:28 is true. Somehow, Jesus causes all things to work together for our good… it blows my mind… I can never figure it out… I don't see it coming… but in the last 17 years that has always been a reality in my life. I'm so grateful to be a follower of Jesus Christ. Y'all look out for the cool things coming from Kairos. This Story is still being written, and for the first time in a long time I'm head over heels excited about where God is taking us as a business.

The first thing I’m stoked about is the new Katering Menu that is hot off the presses. I have went out of the box a bit with this one, and instead of calling it Southern food with a Greek/Italian Influence I have it sectioned off into several slices... Southern, Greek, Italian, Desserts, and spot for everything else. I’ve added all the Southern Favorites that we learned about in Gardendale, along with a Burger Bar and Greek Taco Option. In the “everything else” category I have included all the made from scratch sauces, pimento cheese, my dry ranch mix, steak rub... and a few other things. Also in the works... we are searching for a simple way to get Granny’s Roll Mix in the stores so that you can cook them up in your own oven! I’m already offering the mix to-go, and I have several market testers that are helping me figure out the best way for you to have that privilege in your own kitchen...anytime. The brilliant part is that all you need is a muffin tin and some pan spray to be 20 minutes away from Granny’s Rolls fresh out of your own oven!

Check out the new menu at the top of our website, or go to http://www.connecttocatering.com and place your order online. Kairos is under “everyday catering” We love this website and it makes it so much easier for you and for us! We are also excited about the Cooking classes. Instead of having you come to us, James K Jones and the Kairos Krew will soon be coming to you! We are targeting five areas of the Birmingham area over the next few months. It’s turning out to be so much fun. In addition I have also decided to add some consulting to our list of services. We are working with local foodservice establishments, restaurants, and venues to streamline productivity and find the best way to make organizations thrive. I am particularly excited about this newest wing of Kairos. I worked for a year with The Foundry redesigning their foodservice operations, and it was one of the most fulfilling times of my life. In the consulting arena I will have my beautiful wife, Haley Jones, working alongside me. Stay tuned!

This week I would also like to introduce you guys to a friend of mine. She is part of my business-networking group. Her name is Alanna Rose. I recently spent the afternoon with her in her studio in Hoover. Alanna Rose Photography is something neat called boutique photography. She specializes in modern portraiture and commercial photography. Alanna has a different approach making each session unique. She starts each session off with a consultation and gets to know her clients before they ever get in front of her camera. The end result is a customized session that is truly an experience. Check out her website and further info at www.AlannaRosePhotography.com I am a bit of a snob when it comes to photography, and I can honestly say that her pictures took my breath away and her special attention to detail ends with some breathtaking stuff!

Looking to make a little extra cash this Holiday Season?? Kairos is now seeking part-time and/or full time people to fill our sales team. This can be something you do in your spare time or something you do all day. The choice is up to you! If you are interested or know of someone who is please e-mail my wife at Haleyannhobart@gmail.com and we would love to set up an interview!

The past six months, as we have made the transition from a restaurant that has a catering business to a full-fledged Katering/Events supplier I have had to do a ton of soul searching and seeking Jesus to try and understand what His Plan is for James K Jones and Kairos. To be painfully honest several times I found myself on the edge of quitting altogether to pursue some other sort of career. The pressure got a little heavier too after I got married and we made plans to start a family.  In all that I received a bunch of things that I can tell you about sometimes, but the number one thing was that it caused me to find out what I was created for, and what I was supposed to be doing. I have always had a passion for making food. It has been with me since I was a small child standing alongside my Granny watching her put things together that ended in something good. It has always been my vocation, and even during the dark years when I was in prison cooking for people was my great escape. It would seem that with all that I should be a restaurant guy. After closing the Gardendale Kairos I realized that if I continued in the restaurant business it would suck my life away until the day that I died. And I just didn’t have the energy to do it that way anymore. That’s what led me on my current pursuit, and in that I actually feel more alive than I ever have. I have also come away from that with a great compassion for people who are suffering in similar ways... financially... emotionally ... vocationally. Surely I can’t be the only guy out there that feels like I am spinning my wheels and getting nowhere...

"Today you are you, that is truer than true. There is no one alive who is youer than you." Dr. Seuss

I believe we all have something we were created to do. A Passion and a Purpose. Sadly I also believe that for many reasons many of us will never find out what that is and if we do then oftentimes fear keeps us from going after it. I would rather fail and go bankrupt 1000 times than to get to the end of my life and realize I failed to live out all the potential that God had for me. Gosh, I wish I could go back and drill that into my head, but when you are stubborn like me, most times it takes a painful process to get on the right path. I want to be the best me that I can be, and Jesus has taught me that’s what He wants too. For all of us! To be the best me I can be. To find and live out everything that He created me to do. When I just desire to be the best me I can be, then I am no longer in competition with you or with anyone... why? Because your job is to be the best you that you can be and that is gonna look totally different than me because I am me and you are you J I am free from having to compare myself with you! ... it also gets rid of my pride because in that I find out the cool truth that everything I am and everything I can do are gifts that are placed in me by God. Pure Gift. Nothing I can do to get it or earn it.... its already there.... In being the best me I can be I also don’t have to tell you how to fall down and my feet and learn so that you can be... Just. Like. Me. .... Why? Because you are you. Nothing infuriates me more than when someone wants me to be .... Just. Like. Them. ... and if I’m not then maybe I am doing it wrong... Ha. For me the best Teachers I have learned from have never been the ones that taught me to be like them. It was, and is those who inspired me to think, to ask questions, and above all to seek Jesus for understanding... not pompous experts, but gentle servants.... I believe that Leaders are Learners and the best Leaders influence other people to learn. I encourage you this week to ask yourself, and God... “Am I being the best me I can be?”

God Bless You! Thank You for Supporting Kairos! And have a wonderful week!

James K Jones
