This week is the big week!! We are so excited all around
Kairos with the all Valentine’s Buzz that’s going on! One of you will be able
to win Dinner for two! Here’s the catch. Tell us why you and your spouse or

We will also be adding something new this year to our
Valentine’s festivities. Tuesday thru Thursday we will be offering some awesome
cupcakes I have created just for this occasion. Decadent Chocolate and
Strawberry Passion. Denise even ordered some pretty pink boxes to package them
in. They will be available for pickup or delivery. And these little bites of
delicious goodness are good for the Ladies in your life, and the Gentleman.

Valentine’s is a special time for all of us, but it is
especially dear to my heart because this is the one night of the year where I
can go all lavish in the kitchen without worrying about food costs and all
those other daily details that can sometimes take the joy out of cooking for
you guys. This year’s menu will be four courses that starts with a Soup. I have
Chosen two of my favorites... White Bean Soup, which has a creamy base with Great
Northern Beans, Cannellini beans, Mild Green Chilies, and a few secret things.
The other choice is Golden Potato Bacon, which I made for my Miss the first
time I formally cooked just for her, and I must say I knocked this recipe out
of the park because she has been mine ever since J
The 2nd Course is Salad with a choice of a Traditional Mixed Green
Salad with Raspberry Vinaigrette or our Broccoli Salad. The Entrée Choices are
a Steak, a Fish, and a Chicken dish. The Steak is hand cut Filet Mignon that is
marinated in my romance seasonings, grilled to perfection, and smothered in
Marsala Wine Sauce with Mushrooms. It’s served with my Twice-Baked Potatoes and
when these two meet on one plate, there is Love. J
I have to tell you, I wait all year for Valentine’s and for this Steak. To me
it is the best of the best, and this one never fails to keep my Staff talking
all year as well. If I had to choose, this would be my pick! But if Steak is
not your favorite, then I’m also making our extravagant Chicken Florentine, which
in my opinion is the most fancy dish I make, and it will be served over Ziti
Pasta with a rich cream sauce. The Fish this year is my Sweetheart Salmon...
Hand Cut Salmon Fillets marinated in Luscious Lemon and Dill, then grilled to
perfection and glazed with my Strawberry Sweetheart Glaze. This is the tops in
the Seafood World, and very romantic to boot! The Desserts we are finishing the
meal with are Double Crusted Cheesecake with Strawberry Coulis and Honey (I’ll
be making this on the NoonDay Show on Fox 6 Tuesday 2/12 at 12:45) and my
Chocolate – Chocolate Cake with Raspberry Coulis. It is going to be an
incredible night, and I hope to see many of you there! I am so excited about
the food that I almost forgot to tell you about all the things we have planned
for the atmosphere. Lenny Madden will be playing Live Acoustic Jazz and will
set the tone with a distinct air of specialness, and Brian Batista will be on
hand to catch your special night with a formal photograph, and we’ve pulled out
the best of the best to serve you this evening. And although most of my time
will be spent in the Kitchen, I’ll be making several strolls through the dining
room throughout the evening! I’m excited ya’ll!!!
I’m not sure how many of you keep up with my personal life,
but I have shared some of my struggles with you along with the good things I’m
learning on this journey. This Valentine’s has significant purpose for me, more
significant actually than any other Valentine’s that I have ever experienced.
It’s odd in a weird but great way. Just
a few short months ago Jesus brought a wonderful young woman into my life. And
just in these few short months I have experienced so many things that I never
thought I would experience. She is a perfect fit for me in every way. She says
I am a perfect fit for her in every way, and the more I learn about her the
more I love her. I am very excited about the future for the first time in a
long time, and I have a Peace that I cannot describe. It’s just.... right.
Well, you may be thinking “How did you find her James...”
You may want to use my formula. J
You may not. The Truth is I didn’t really find her at all. I simply gave up. I
said “Jesus, obviously every relationship I try to make work doesn’t... so I
give up... If I have to be single for the rest of my life that’s okay...” And I
meant it with all my heart. Then what happens? Here comes this beautiful,
awesome, incredible, talented girl who loves Jesus and is following Him in a
non-religious way, and we began hanging out, and now I think I know that she is
the one that Jesus has for me to journey through this life with... and the
incredible thing to me, the thing that I have just realized is that There Truly
is No Fear in Love. Wow! There really is no fear in love When it's mutual,
committed, believes in each other, and is ready to do life and to face life
Together. But the real thing really didn’t find me until I gave up all my
illusions of what I thought it should look like.
If you are single today I encourage you to wait on Jesus.
His Plans are always better. He knew what I needed, and he knows you inside and
out. For years I didn’t understand. Now I do!
