Happy New Years Kairos Fans!!! I am hopeful that your Holidays were all that you anticipated them to be, and I look forward to building relationships around food with you in 2013! Kairos Kafe is being featured in a New York Times Article. We are very pleased with the write-up and excited that this Wednesday, January 9th, at 12:00 they are coming to take photos for the Newspaper. We are attempting to pack the house, so ya’ll come on out for Lunch that day and let’s show the New Yorkers how we roll down here in Birmingham, Alabama! We are also honored that The Birmingham News is featuring Kairos Pimento Cheese in an upcoming article. This recipe has been causing a buzz in recent times because its packed full of delicious goodness!

And speaking of delicious goodness, it was nice to have a little time off with family and the special folks in my life, but it’s even nicer to be back at work in my little kitchen creating new and exciting things for you guys to eat! The Fish this week is fresh Atlantic Salmon grilled to perfection and glazed with my Honeymustard sauce. I haven’t done Salmon in a while, and some of you have brought that to my attention. I do apologize and hope you enjoy the Fish this week! We are also featuring our grilled Tilapia, and my personal favorite, the Southern Fried Tilapia smothered in my lemon butter sauce with capers to add that extra little kick. The Soup this week is Kairos Chicken Noodle, which is nothing like your ordinary Chicken Noodle Soup. We took it to a new level of mmmmmm. And speaking of Soups, with this cold weather I have been on a Soup-Kick for the last month or so at home. It seems that Soup is all I want to eat. And of course the Soup that comes in a can just won’t do it for me so I have brought out all the old favorites and even learned a few new recipes. I had a thought the other day that maybe we should try a Soup-Salad-Sandwich idea on the D.G. Express. I have plenty of off-the-chain recipes and the thought of pairing that with grilled cheese sandwiches or even pimento cheese quesadillas makes my heart smile. I’d love to hear your thoughts on that. One more thing we added to the D.G. Express in 2013 is a Kobbler selection each day. I started last week and it has been a hit! And I only have about 19 different Kobbler Recipes so I think we will be having fun with this idea for quite some time. If you haven’t been in to try the “Kairos Delicious Goodness Express Lunch Buffet” then I encourage you to do so! It’s Fast, Fun, and filled with Delicious Goodness, and you can even get it to go! The word is that it doesn’t disappoint! I hope to see you this week!

It’s a New Year. 2013 is upon us and this is the time where most of us talk about our New Year’s Resolutions and all our goals, etc. I don’t participate anymore in the customary resolutions idea anymore. I haven’t for several years. Not that there is anything wrong with that, but I realized a few years back that I never ever never kept them anyways so what’s the point? I salute those of you who do keep your New Years Resolutions though.  What I have learned to do is reflect over the year that is closing and try to determine what I need to prepare for in the year that is coming.
This New Years Eve I was in Georgia with family and I woke up early in the morning. Too early really. I tried going back to sleep but it seemed like Jesus wanted me to just sit with Him and reflect before everybody woke up. I love these "Kairos" moments in time. As I sat reflecting on the last day of 2012 my heart was filled with gratitude and joyful anticipation of the wonderful gifts that I held (loosely) in my heart. It had been a year of devastating losses for The Kairos Team, The Jones Family, The Whitaker Family, and The Mulkey Family. Yet somehow Jesus had brought something good out of all of it. When 2012 began just 12 months prior I was on a different path. I was planning to get married and start a family, I was planning an Epic Kairos Kafe in Gardendale, and my heart was full because I had just watched Jesus do a marvelous transformation in the heart of my Granny. If you had told me then that my engagement would end badly, that the Kairos in Gardendale would be an epic failure, and that I only had a few months left with my Granny, I wouldn’t have believed you. I didn’t anticipate any of that, but that’s what my year looked like.

Romans 8:28 is perhaps the most mysterious scripture in the Bible for me "All things work together for good and are fitting into a Plan for those who Love Him" The reason it's so mysterious is because it makes no sense to me. He uses ALL things? All? Really? Yes! All. The good. The bad. The things I understand and the things I don't understand. The things that feel good and the things that hurt like hell. He uses them all, and somehow, everytime, He makes it good and makes it fit into His Plan. Kairos Kafe is perhaps the most stable that it has ever been, I have a new passion for cooking and writing, we have all found our Niche through all the things we endured this year, My Granny is in the presence of Jesus and lives forever in the hearts of all of us, and I look forward to 2013 with joyful anticipation and the most beautiful girl on the planet by my side. If any of you are struggling, or just don't understand, put your hope and faith in Him and in that promise. Jeremiah 29:11 is for all of us! Happy New Years Y'all!!
