Kairos Kountry Buffet
What’s Up Guys,
I hope you are all having a great start to your week. This
week has been full of delicious goodness around here. I have been cooking up a
storm, and I’m loving every minute of it! The Specials this week include Kairos
Chicken Denise... Pan Seared Chicken with sautéed broccoli, an awesome cream
sauce, and Mozzarella Cheese. The Buffet this week will feature Mee-Maw’s
Chicken & Dressing, Beef Tips and Rice (a new recipe I’m working on),
Collard Greens, Butter Beans, Cream Corn Salad, and much more... The Fish at
Both Locations is a winner Fresh Tilapia, Southern Fried or Grilled with Lemon
Butter Sauce and Capers. This week I had a guest tell me that my Fried Tilapia
was... “Better than Captain D’s” ... I’m taking that as a compliment. J We also have all your
favorites, Kairos Greek Taco, Branden’s Fried Green Tomatoes, Fried Pimento
Cheese, and Jeremy’s Made From Scratch Fries! Come and see me this week at one
of our locations in Birmingham or Gardendale... or both!

This week I have been facing some tough obstacles in our
business. There are several things going on that make me nervous, and when
things are not going as they should I feel like I should be doing something
about it. Every morning when I prayed the only thing I could hear Jesus saying
to me was “James, Go Cook.”
Around Friday morning I was aggravated with the whole thing,
and I was crying out to God to show me what to do... again... “James, Go Cook.”
I went through my house stomping my feet and questioning God... “With
everything that is going on that’s the only thing you want me to do?? Go
Cook??”
Yup. That was his answer. I’m still not quite sure how to
take all that, but it seems clear to me that there is a lesson here that I need
to learn or I will continue to circle this mountain again and again. I’ve had
seasons of Jesus telling me to trust Him, to do this or to do that, but I don’t
ever remember Him telling me to do nothing. I can’t wait to tell you guys how
this one turns out. When I’m not fussing about it I’m smiling. But I can tell
you this one is more than hard.
"We were crushed and overwhelmed beyond our ability to
endure, and we thought we would never live through it. In fact, we expected to
die. But as a result, we stopped relying on ourselves and learned to rely only
on God, who raises the dead. And he did rescue us from mortal danger, and he
will rescue us again. We have placed our confidence in him, and he will
continue to rescue us." 2 Corinthians 1:8-10 NLT)
I think the most important thing for us to hear in any
situation is what Jesus has to say, and if He says do nothing, or Go Cook, then
that must mean He has something pretty incredible in the works.
