What’s up Kairos Fans,
Momentum has really picked up around Kairos. We are so excited that we are about to get into the Thanksgiving Season, which is my favorite time of year because it means I get to come up with new and exciting dishes to prepare for my family, friends, and all of you guys! We will have our Thanksgiving Menu out by next week! I also taped a few spots on Fox 6 this week that featured two recipes, Pumpkin Soup and J.J.’s Awesome Cranberry Sauce. This week I have decided to do some of the same things on the Specials. Mee-Maw’s Chicken and Dressing with that awesome cranberry sauce has been selling like crazy! We seem to be unable to make enough of it to last through a Lunch Shift! Today a lady sent word to me… “Tell James that he put his foot in that Chicken and Dressing!” Fortunately I know now that is meant as a compliment. When we first opened here I had a customer who told me that I put my foot in her food…and I thought something was terribly wrong! She explained though that it was meant as a good thing. The Chicken Tenderloins with the new Sweet Chili Sauce continues to make many of you happy, so we will probably put that on the menu soon. The Soup is the Fall-Favorite, Pumpkin Soup, or the other choice is the ever warm and popular Cream of Potato. The Broccoli Kasserole, which is the Veggie, is also hearty and comforting. Our latest Kobbler, the Key Lime Kobbler, is the dessert and it is filled with unique delicious goodness! There is just so much to try this week. I can’t wait to see you in Kairos Kafe.
Today has been an interesting day. My days, nights, and everything in between have been consumed the last few months with the opening of our new place up in Gardendale. We have faced so many obstacles that seemed insurmountable and yet we’ve overcome them… it has been a rough process, and in the last month or so it has looked as if we were on a clear path to getting it done in record time. This morning though, I got some very discouraging news that we are going to have to redo something, from scratch, that we hadn’t planned on doing… and don’t have time to do… and don’t have the funds in our budget to do… and yet, here it is. I have to do it or we won’t be able to pass the fire code and open…
My first thoughts were anger, then self-pity, then oh-no, then “Why me, Jesus?” Some of this stuff just makes me want to scream. But today, as I drove away from my bad news my mind was flooded with all the obstacles that have jumped up on me over the past fifteen years… Amazingly, I could not recall even one time that God allowed obstacles to swallow me up or stop me…or even to really harm me. So, I decided to do something that I have been reading about in the Bible. Several passages that say “Be Grateful, and give Thanks, regardless of the circumstances…”
Its real easy to be Thankful and Grateful when you don’t have obstacles… its much harder when you have stuff going on that makes you anything but grateful. But somehow, this morning, I knew that was what Jesus was saying to me … “James, Thank Me, and Trust Me, even though everything is not going according to plan…”
This brought to mind another thing… I may not have saw this thing coming, but God knew that it was going to happen all along… so all I have to do is be grateful, trust His plan, and keep on moving forward! Easier said than done, but in the end it is awesome to be in that place! We will have some refiguring to do, and we will have to come up with some creative stuff, but we will get it done. And I believe that since this thing in Gardendale has become so hard, that it is gonna be an absolutely mind-blowing wonderful thing once we open!
