Kairos Pork Chop Sandwich

It has been an incredible week for me and for my Staff. A week of rest and some fun in the sun is an awesome way to clear your mind and gather new perspectives on what you are doing and why you are doing it! For me, the mission of Kairos is simple... Building Relationships Around Food. Love People. Cook them Good Food. I hope our absence in the past week made your hearts grow fonder for Kairos!
We are ready to Rock and Roll this week. The Specials are full of delicious goodness! Making a comeback this week is my Pork Chop Sandwich. It is off the chain! It starts with a hand cut boneless pork chop that is grilled to perfection then slathered in my Honeymustard BBQ Sauce. That's not all though because then it is topped with a grilled green tomato and the best slaw recipe that I have ever concocted. I have had many of you tell me that this is the best sandwich you've ever ate!! I love this recipe!! The Dinner Specials are off the chain as well. We have found a new way to eat Chicken Parmesan... On a bed of linguine smothered in Alfredo Sauce. It is so good it will almost make you cry! And remember, the kids eat free pasta on Monday nights and free pizza on Wednesday nights. Life is full of twists and turns, ups and downs, lessons to be learned, and sometimes hard roads to travel. I like to think of myself as an out of the box kind of guy, but then situations arise that show me that's not always the case.
I was recently confronted with some business problems at Kairos that made this clear to me. Since we've opened up in Gardendale the most common request has been for a meat & three. I get that everyday. Sometimes ten times a day. My thoughts are to resist it, but since it keeps coming back to me then why won't I at least consider it? I believe it's because I have my thoughts of what Kairos should be in a box. I usually know when Jesus is talking to me because He usually asks me questions...
"James, when do people seem to be the most excited about Kairos? Why?"
The honest answer is that most times folks are really enthusiastic when we do the Mothers Day Buffet, a Wedding Buffet, or when we Kater something... I hate to say that but it's true. But in my mind I don't want a buffet in Kairos. When I think of a buffet I think of low quality food, and high volume madness. But, that seems to be what the people are wanting so, along with my inner circle of leaders at Kairos, we are planning to install a small buffet at Kairos Gardendale in the next few weeks...But I promise you, the food will be top notch and the menu option will still be there for those who don't desire the quicker option.
This process of giving in made me think about all the other areas of my life that I have fitted into a neat little box... And how Jesus wants me to get out of the box, out of the boat and follow Him into His plan for my life and for Kairos.
It reminds me of the preachers and teachers who have everything figured out. I get irritated when I listen to some of it because they can tell you just how the world will end, just how Jesus will return and so on... But it makes me remember the Old Testament stories of all the Teachers and Scholars who had the Messiah all figured out... They knew it all, had it all together, but then Jesus came and he was right in front of them and they didn't even know who He was... Have you ever wondered why? I think it's because they had God in a box, and when Jesus showed up He wasn't obligated to be in their box... I think the same is true for us today. Just because we have it all figured out doesn't mean that's how it will be.
I have decided that I don't have to have everything figured out and tucked into a neat little box. Is Faith really Faith if it doesn't have some unanswered questions?
