Hey everyone,
My name is Eric Longenecker. I am an intern at Kairos Kafe. I decided to spend the summer in a Business Management position for James Jones at the Gardendale location. Okay, I'll get to more of me later, but let's get to what you guys want to hear. Red Velvet Cupcakes. Oh my goodness. I will be the first to admit that I was never really fascinated with the thought of anything Red Velvet until recently. I was blown away by some red velvet cheesecake that my girlfriend got me to try at another restaurant several months ago. And for the many of you who have had James's food on a regular basis, you know that there is no recipe that he will back down from. Present him with a challenge on the grill or in the oven, and he will take it on. Well, he took on Red Velvet. And I must say that he certainly delivered. Guys, if you get the chance, you want to try these. I promise. James went above and beyond what I expected, and I think you will agree!
I know this is generally a spot where James gives some love to a new item on the menu or something that people are just eating up. But if any of you know me, you know I had to give the French Fries their due. One of the toughest things about opening up a second location was the consistency of the tastes from one location to the other. Believe it or not, this is something that takes a little bit of time to master. I must say, the fries are back and tastier than ever! Anyway, that's my little shameless plug for my favorite food in the entire world.

Also, this week will be our last week open before we close for the week of the 4th of July. Both locations will be closed from July 2nd-7th. We will resume operations at both locations on Monday, July 9th.
I know everyone can make reference to the old Bible story of David and Goliath. Never back down. David must have lived by that phrase. I think about this past month, and what it takes to open a new location of a restaurant. Goodness, if you easily back down from challenges, do not open a restaurant. Just when you conquer a challenge, you get an untimely visit from another.
I wasn't always going to be working for James K Jones and Kairos Kafe this summer. Nope, I was headed off to another city, working for a huge corporation. But it was one of those things where it was just too easy. There was no challenge. I could just blend right in with the rest of the massive working population, do my 9 to 5 and go home feeling unneeded. I've always longed for the "big fish in a small pond" scenario in my life. Which makes it even crazier that I was willing to accept such a position. God intervened through some important people in my life, and got me thinking about other places to work. My decision was no longer difficult. I've had dreams of working with Kairos for years now. Visions of helping us reach goals we never dreamed we could meet.
That is when I felt a nudge from my Creator, and He was telling me not to back down. Almost as if He directly said, "You dreamed it, now DO IT." I was scared. I wasn't sure I could make any kind of a difference. But despite my imperfect doubts, His perfect knowledge brought me here, and I could never thank Him enough for it. There is no dream that is too big, or too bold for God. If you can dream it, He can see it through with a little cooperation from you.
So I submitted to God's perfect will, and here I am. He told me one day a few months ago to tell Him what my biggest dreams for Kairos were. I said that I wanted to see a lot of them open. He followed that up by asking how many. I, boldly, replied, "How about 100?" And you have to love when the Lord hears your requests and gives you confidence in what you are dreaming. He said, "Okay, son. Watch what I can do." And now I'm telling Him, "Fine, God. You win. I won't back down. I'm in this… I'll see you at 100."
