What's Up Guys,
It has been quite a week around here. We had a wonderful Grand Opening at our Gardendale Location, and Kairos Kreations Bakery and Coffee Bar has been a huge success, exceeding all of our expectations! The Birmingham Kairos is also hustling and bustling with what I consider to be the best lunch in Birmingham! I hope to see you this week. In Both locations. Our Hours have been somewhat revised so I am posting them below.

Gardendale - Monday thru Friday 10:30 am till 9:00 pm
Saturday 4:00 pm till 9:00 pm
Gardendale Bakery - Monday thru Friday 7:00 am till 9:00 pm

The Specials this week are tempting and delicious! We served Pork Tacos at our Grand Opening Celebration and the people just raved over them, so David and I began to play around in the kitchen... the result was a Pork Quesadilla that is off the chain with delicious goodness. I ran them last week as a side special and I believe we have hit on something great here! The pork is roasted tender and juicy, then covered with cheddar and my one of kind salsa that really gives it an awesome kick grilled up on a flour tortilla. I hope you will give it a try! The Southern Fried Tilapia is the Fish, and I came up with a new and exciting way to batter it... the results are incredible! The outside is crunchy and delicious (but not too crunchy) and after it’s fried up the inside is moist and delicious ... Then of course the lemon butter sauce and the capers just send your taste buds into the stratosphere! This recipe is definitely a keeper! There are also Dinner Specials for the Gardendale Location. This week we are featuring a hand cut Ribeye, Shrimp and Chicken Alfredo, Chicken Parmesan, and some awesome appetizers. The Bakery Menu is below as well. We have been getting great reviews on the Breakfast Kasseroles and our almost famous “Guffin’s Muffins”!!
These last few weeks have been very rewarding and very difficult. As we are in the process of transitioning from one location to two locations it seems that the opportunities to make mistakes or to drop the ball are everywhere. I have to be honest. At times it seems as if everyone in the universe needs a piece of me and I am pulled in so many directions that it makes my eyes spin. Okay, I’m exaggerating a little bit, Hyperbole is what my Pastor calls it, but it does get overwhelming sometimes.
What should be my response to that? I mean, here I am, walking in everything that I have prayed for, believed for, and hoped for... and sometimes if I am not careful, I will get overwhelmed and actually begin to resent or become frustrated with the very things that are my dreams come true.
This week I was reminded in a very practical way about the necessity of keeping the main thing the main thing. I was training an exceptional young man in the art of expediting. (For those of you not familiar with restaurant Lingo, the expediter is the person who gets the orders from the kitchen, puts them together, and sets up the trays for the servers) When you are operating this spot it is crucial to focus and not get off track, because if you get distracted with other things, the food is not going out the window to our guests. This kid was getting distracted with bowls, so I stopped him and had a “teaching” moment with him. The “main” thing at Kairos is getting the food out to our guests. If we fail at that, or are sloppy with that, or we are too slow with that, then our guests won’t be happy. And if you guys aren’t happy then...well, you know that answer to that...
Later on as I was running from here there and back again it seemed as if Jesus brought that “teaching moment” back to me... only HE was the Teacher. I was reminded how he responded when people were asking him five hundred eleven questions about the Old Testament Books, how to follow the Law, etc. Jesus summed it up beautifully for them way back then (and for me at the present) by teaching us to keep the main thing the main thing...

Pretty simple. Very Profound. And an anchor for this guy. I found out that when I am overly frustrated, it’s usually because I am not keeping the main thing the main thing.
