Chicken Parmesan...Mee-Maw’s Dressing...Addicted to Grace...

Mee-Maw's Chicken and Dressing

What's Up Guys,

This has been an incredible week! There is so much going on that it's hard to keep up. Things are settling down at the new Gardendale location and we are getting out systems worked out. I am very proud of my Staff and all the hard work that goes into starting a new business. The Staff in Birmingham are also doing an incredible job there as we continue to build relationships around food in two locations. We are already feeling led to learn where our third Kairos Kafe should be located, so if your area has an interest then we want to hear from you!

The Specials this week are making me really excited. My Culinary Background is in Greek & Italian Cuisine, but since we opened Kairos my focus has been more on the down home southern cooking that I grew up with. This week, however, the Special is Chicken Parmesan, a good Italian dish with a Southern Kairos twist! We tested out the recipe and we think it's off the charts! It starts with breaded chicken tenderloins that are deep fried and then smothered in our made from scratch tomato sauce and covered with Mozzarella  and Parmesan cheese. You're gonna love it! The Pasta this week is BBQ Chicken Baked Ziti, one of my best Culinary Kreations, and the Kasserole is Mee-Maws Chicken and Dressing, which will not disappoint. The Fish is Grilled Tilapia, and the veggie is Squash Kasserole which will melt in your mouth! I can't wait to see you guys this week for some delicious goodness done the Kairos way, in two locations!

There was some local news this week that has been bugging me about the Leader of a popular youth movement that was arrested. I hesitate to even add my thoughts to the discussion because none of us really know the whole story or what happened. And the speculation and accusations on Facebook have been brutal and made me very sad.

Why is it when someone falls or fails our first instinct is to judge and attack before we even have a full collection of the facts? I'm not saying this to criticize either, but because that seems to be my own first instinct.

On the other hand though, as a leader I have learned the importance of being transparent and honest with my Staff and Friends and Family. Ask anybody who knows me and they will tell you I am a man of many mistakes and faults. I can't tell you how many times I have messed up, dropped the ball, and completely failed in just about every area of my life. But there is one powerful thing I have learned...

If I smile and act as if I did nothing wrong then I lose the respect of everybody. Or if I make excuses, or blame someone else for my shortcomings then the same is true. BUT, even if I mess up royally, if I own up to mistakes, lay down my pride and say "I was wrong. Please forgive me, and I'm asking Jesus to change me in this area..." then the results are something different. My Staff recognizes that I am human, willing to change, and vulnerable just like them so something else happens... I win their respect and they are willing to learn and grow alongside me.

That's the most powerful lesson I have learned as a Leader. I need Gods Grace every step of the way.

As for this young man (who I have watched over the past several years) I hope that if he is not guilty he will be exonerated. But if he is guilty of this silly thing then I hope he will learn some powerful lessons through all this and I have no place to condemn him. We all are in a process of growth and we all need the Grace of Jesus to help us on every situation. I know I do!

God Bless you this week as you follow His perfect plan! Thank you for supporting Kairos!

  1. James,

We made are way down from Penna last week and Melissa and I had lunch at both locations. We had a minute to spend with Jeremy and get the broccoli salad that I crave. Also loved the new Gardendale location, food was wonderful at both locations.

    Thank You,

    Bob and Melissa Kougher
