Sweet Heat Grilled Salmon...Cheesy Chicken Ziti...Dealing with Discouragement

What's Up Guys,

This has been a particularly trying week, but I’m learning that there are always golden nuggets in every situation if I will just look for them. The HVAC guys are hard at work at the Gardendale Location, and hopefully next week will be the final round of finals before we can open the doors and begin loving people and making them delicious food in the North of town area. I have to keep reminding myself that no matter what challenges we face, and no matter what we are up against it doesn’t realty get any deeper than that... we’ve always wanted “building relationships around” food to be more than just a cute catchphrase, and I am very grateful for each of you that have joined us on that journey.

Speaking of delicious food, the Specials this week have my mouth watering. The Fresh Salmon is the fish, its marinated and grilled to perfection and then smothered in a neat “Sweet-Heat” glaze of Honeymustard with a touch of Cayenne pepper that is a taste sensation that takes the taste of the Salmon to a whole new level. The pasta is one of our top sellers and my favorite, Momma’s Cheesy Chicken Baked Ziti. I have described this recipe as a cross between Macaroni and Cheese and your favorite Chicken Casserole. I named this for my Mom, but it was actually created because of an idea that I got from a Special recipe my Granny made me when I was a kid... she had a neat way of trying to satisfy everybody, and I wouldn’t eat traditional chicken and dumplings as a child, so when she made them she would make egg noodles for me that had this awesome chicken/cream sauce on them that were so good I could eat plates of them. The sauce in the Cheesy Chicken Baked Ziti has that same unique taste of delicious goodness. If you haven’t tried it yet I encourage you to do so, as a meal or as a side. Granny’s Poppyseed Chicken Kasserole is also on Special this week, and it is also a true experience with delicious goodness that is unparalleled. The Soups are our ever-popular Cream of Potato and my Black Bean Soup that is one of my favorite Soup Recipes. With all this going down at Kairos this week I hope to see you in the Kafe!

Remember that story in the Bible where Moses was stuck by the Ocean and Pharoah was coming to kill everybody... and the Israelites are all screaming at him "Pay This. Pay That. Fix This Broken HVAC Unit! I need a Raise. Give me my Check! When is Gardendale gonna open!!!" Oh wait. That's my story. Haha. Same principle though. Homeboy had his back to the wall, under pressure, looking at some grim circumstances with all them folks hollering at him... He didn't have anywhere to turn but up, and God came in and did some miraculous stuff that the critics are still debating 4000 years later...

This has been my week. Now I know from experience that if I ever get to feeling sorry for myself, even just a little bit, then its like messing around on the side of the Chattahoochee River (where I grew up) and as much as you don’t want to get dirty or fall in, if you keep messing around on the banks then inevitably you are gonna slip in... Then you have a whole new set of problems.

For me, feeling sorry for myself has always been like that, and yet... for some reason I am often tempted to go there. I know that if I do then I will wind up in the pit of depression, unable to do much... stuck in a rut. What do I do then? It always seems to be a different solution but this week I felt like God brought a scripture to my heart about Jesus. It’s in Hebrews. It says that Jesus was able to go through the pain and the shame of his crucifixion because he could see past that, and he was able to see the joy of the finish line, and part of that joy was you and me! How cool is that?  

I felt like I was supposed to take my eyes, emotions, and my focus off of all the obstacles that we are facing and look ahead to the finish line, and what a Blessing it is going to be to have a new Kairos in a new area, with a new staff, and new customers, and new endless opportunities to impact lives... in light of all that, and in light of the things that Jesus suffered, then I need to go sit myself down somewhere and be happy J

Jesus is the same today as He was way back then with Moses, and when I find myself in those situations, and wait on Him to handle business, He always does. And I always worry that He won't, but He always does... Suddenly. Thank You Jesus for your Faithfulness. I hate the process most of the time. It sucks. But YOU always have purpose and you always know what's up!
