This has been another incredible week. I am so grateful for all of you who are loving Kairos in two locations! The best way for me to describe the momentum at Kairos is this: Have you ever seen someone walking a big dog (or attempting to) but the dog is actually walking them? I mean, they have the leash in their hands but the dog is the one pulling them? That’s where I’m at this week, and I absolutely love it! My Staff and I are having a blast, but we need to add to the Kairos Team! Come be a part of our awesome Kairos Family! We are accepting applications for Prep Cooks and Servers. The Greek Tacos are off the chain again this week! I love these so much that they will surely make it onto the regular menu, and the comments that I have been receiving are in favor of the Greek Tacos. The Fish is a taste sensation of Tilapia, marinated and grilled and smothered in our savory lemon butter sauce with capers. Granny’s Poppyseed Chicken Kasserole has been such a hit that we can barely keep up. I understand why though. Who could resist the delicious goodness of tender pieces of chicken smothered in a creamy Poppyseed sauce that is out of this world? And the crunchy topping takes it to another level of comforting deliciousness. Granny would be so proud! Momma’s Cheesy Chicken Baked Ziti is also filled with delicious goodness that is almost irresistible! With all this delicious goodness in two locations I hope to see you guys in Birmingham, Gardendale, or both! Thank You for loving the food. It’s a dream come true for me.
This past week has been a little different. My Staff, Friends, Family, and I are celebrating the successful take off of our second store, and that is very exciting, and we are very humbled by the results. It’s greater than anything I ever imagined. Thank you to all of you. This week though a very good friend of mine lost her brother to a drug overdose... so in the midst of all the excitement there is also a great sense of sadness. My thoughts and my prayers are with the Busbee/Pursifull family, and if you would please join me in praying for them as they try to deal with losing a loved one too soon. The weight of something so sudden can be unbearable, but I know that Jesus is pouring His Amazing Grace on them even as I write this.
I was also reminded yesterday that it has been a whole year since the tornadoes ripped through our area and caused so much devastation. My heart and my prayers go out to all of those who experienced such great loss.
In the middle of all this I’m wondering how in the world do you balance so much going on and at two ends of the spectrum? My Mentors have told me that I am a “Black and White” thinker. And they are right. It’s usually all or nothing in my thinking, but over the years Jesus has challenged my thinking and I’m learning to allow Him to change it, even though it’s a process for me. This week I am reminded of the scripture that says, “Weep with those who weep, and rejoice with those who rejoice” That can be tough for someone who has my thinking process, but at this stage it really makes sense. Maybe for the first time.
