Valentine’s Menu...Greek Tacos...Without a Plan

What's Up Guys,

This has been a pretty neat week. We are one step closer to opening the Gardendale Location, but I had the thought this week that I need to make sure all of you Loyal Birmingham Customers know how much I appreciate you guys, and to make it clear that Kairos Kafe will remain one business, but with two locations. Without you guys, the Gardendale Kairos would not even be a possibility, because before you put us on the map nobody even knew what “Kairos” meant. I know that we have some glitches to take care of in the coming months, but just know that my staff and I are doing everything possible to prepare for the expansion, and that we will continue to “build relationships around food” with the same great food and service at both locations, and in addition to that you will also be able to join us in Gardendale for Dinner! 

The Greek Tacos have been a hit! I’m pretty sure these guys will end up on the menu at some point, and the healthy spin on The Tilapia this week is both delicious and nutritious! Granny’s Poppyseed Chicken Kasserole is a comforting, hearty taste sensation that is so good it will make you come back for more. This week I also put together our Valentine’s Dinner Menu. Most of my friends wait all year for the opportunity to have the grilled filet mignon with sautéed mushrooms and marsala wine sauce. It’s kind of a joke in most of my personal circles because I usually only do it for Valentines because it’s expensive, but it sure is worth it! I’m pairing that with some incredibly satisfying twice-baked potatoes that are coupled greatly with the steak and the marsala sauce, which I must admit is off the chain! The Evening starts with Granny’s Rolls, Soup, Salad, Entrée, Dessert, and a few little surprises to make it a true “Kairos” experience. I have the menu at the bottom, and reservations are preferred. And don’t worry about whether or not you have a Valentine. This year I’m thinking about doing a group sitting for those of us who don’t have one, and even providing a little entertainment myself. I wonder if any of you would be interested in that? I would love to hear your thoughts, and I can’t wait for this opportunity to cook some really fancy food in a very romantic atmosphere!

These last few weeks have been interesting for me. For the first time in my adult life I don't have a plan. I don't know what's coming next. And I don't care. This is very weird for me, but at the same time I am convinced that it is something I am supposed to learn.

Somehow through all of this I have the most incredible sense of Peace. And its really good stuff. I honestly cannot explain it. I have always been a planner, you see, and as long as I have the plan all mapped out in my mind then somehow I feel like I am in control. It occurred to me this week though that even though I have always had these detailed plans, and wasted my energy on them, somehow things don’t ever really fall into place the way I have planned, so what’s the point? It’s bringing me to a new awareness of life and experiencing Jesus and His Presence in ways that I never have before because I am learning that my life doesn’t depend on my plans, but His...
