Squash Kasserole...Chicken and Dressing...A Call for Freedom...

What's Up Guys,

This has been a crazy week. We have so much going on that it boggles my mind if I think on it too much. Hopefully by the next time I write you guys we will be one business with two locations! The Valentine's Dinner was a great success and it was a very special time for me to be able to talk to my guests face to face. Almost everyone commented on the newsletter and that made my heart smile real wide.

The Greek Tacos continue to receive rave reviews so that will be the Special this week. It seems that I can't get enough of that tender Greek marinated chicken wrapped in a warm flour tortilla and slathered with our creamy cucumber Greek sauce. These tacos are off the chain with delicious goodness. The fish this week is one of my best seafood recipes, grilled Atlantic Salmon with a honey mustard glaze. The glaze really takes the taste of the salmon to a whole different level, and it is also a healthy choice. The Soups are cream of potato and my roasted tomato, which goes well with just about any dish on the menu. Mee-Maw's Chicken and Dressing is also making a comeback as the Kasserole this week. I have had many requests for it! The Pasta is Marian's Meat Baked Ziti, my version of lasagna that is a delicious and comforting meal any day of the week. The Veggie is Squash Kasserole, another favorite, and the Dessert is my Strawberry Kobbler. With so much deliciousness coming out of Kairos this week I know that I will see you in the Kafe! Yesterday we set up the new kitchen in Gardendale. When I saw how much prep space we had I almost cried. It is beautiful and I'm sure I came up with st least five new recipes while I was looking at it! Let's just say I'm very inspired and I can't wait for you to tell me about the results.

Today my heart is heavy as I think about the recent death of a great and talented entertainer Whitney Houston. I grew up listening to her music and in my opinion she was the greatest female vocalist of all time. Now her life has ended in the same way as many of her peers, including Elvis Presley, Michael Jackson, Jim Morrison and so many more...

All this really brings home the thoughts about drug abuse and the things it has stolen from me in my years on the earth. As a child my family was ripped apart because of drugs and I lost the opportunity to grow up with my little brother. I also lost the only Dad I ever had in the house with me. As a young man thinking I could play around with drugs I almost lost my life, and what was left of it was a hefty prison sentence and destruction on all sides.

Jesus redeemed my life. Don't get me wrong. I know that but it seems to me uthat for the past 25 years I have done everything that I could to get away from drugs and their effects but somehow I am continually confronted with people who need help. When I am able to help influence someone to do the right thing and to find freedom then that is awesome. But there are many others that have come through my life that have gone back down that lonesome, dark road.

What do I do?? Give up?? Take care of me and not worry about the others? That's what my mind wants to think. But somehow it seems that Jesus says something else. Keep on going. Keep on trying to lend a beacon of hope for those that want it, and keep on following Him.

This week I made a promise to Him. For the rest of my time here on Earth I will use my story and the things I have learned to shed light on this issue that haunts our cities, kills our celebrities, fills our prisons to overflowing, and negatively affects our children. The only way it can be stopped is for us to talk about it. Bring it into the light.

In our world many things influence us. The Media, our Culture, our friends, family, and Jesus. I want to seek not only to be influenced by Jesus, but also to be used by Him to influence others to know that Whom the Son sets free is indeed free. Will you join me on this mission? We can make a difference.
