Kairos Kreations...Meat Ziti...Enjoying the Journey

What's Up Guys,

What a week this has been at Kairos Kafe. We have been busily finishing up the last minute preparations on the new store, and it seems that there is always just one more thing, then after that one more thing, and the suspense is driving me up the wall. Last night is screwed the very last screw into the last chair butt and that was a really incredible moment! I cannot even begin to describe the euphoric feeling that gave me. We are incredibly grateful for this opportunity to expand Kairos and take “building relationships around food” to the next level!

As we go forward the Specials each week will remain the same. The only difference is that we will be adding Dinner Specials, and we are very excited about that. The Lunch Specials will remain the same at both locations, and if any of you guys have any suggestions for Dinner then I would love to hear them. The addition of “Kairos Kreations – Bakery and Coffee Bar” at the new store really has me excited. The Bakery will be open for Breakfast until the restaurant closes, so for the first time in the history of Kairos you guys will be able to sample every one of our desserts whenever you please. The neat thing for me with this addition is that I never saw myself as a pastry chef or even that big of a dessert maker, but over the past five years I have learned so many wonderful things, and most of those started as a request from one of you. That is very dear to my heart. The Greek Tacos are the Special this week, and they are so good I’m thinking we may have to add them to the new menu. A customer had his last week with Tilapia instead of chicken, and after a rave review from him I am considering adding that as an option. Mee-Maw’s Chicken and Dressing has people watching the Specials Menu and coming from miles around to sample that delicious goodness so that will be the Kasserole this week. The Pasta is Marian’s Meat Baked Ziti, my funner version of the Classic Lasagna that is loaded with meat sauce, made from scratch tomato sauce, ricotta, mozzarella and parmesan... Mmmm... I really don’t have to add anything more to that description, it’s just exceptionally filled with delicious goodness. I look forward to many years of coming up with new and interesting dishes to try out as we build relationships around great food together! I hope to see you in the Birmingham Kairos this week, and next week in both locations!

This past week I had the opportunity to pass on a little bit of my Granny’s History at the new Kairos. Last year we helped her moved into an assisted living facility in Dallas Georgia. She is having a blast there, and I am so excited to see her so happy. Before she moved in though she had to downsize all her belongings. Of course I ended up with 88 years of cookbooks and recipes, and a few other things that I wanted and everybody in my family got some small part off the things that she collected all her life. She told me “J.J. I want you to have my plate collection.” I knew that she was talking about her massive assortment of plates that had come from just about every state, city, and country that she and my Grandfather has visited while he was in The Air Force. I told her that I didn’t want them because there were too many. Her response was that she knew I would take care of them, but for me it just seemed like too much. I told her that I would take them if I could display them at the new Kairos Kafe in Gardendale and she agreed with a smile. We have an area for private parties that we are calling “The De Allen Room” and I put them in there up high for all the world to admire. It was a pretty special moment for me, a “Kairos” time, and I am so glad that she insisted that I keep them. I feel like a part of her will always be with us in that room.

It made me think of our lives, and how we get so busy sometimes just making a living, or hurriedly trying to get on to the next chapter, or the next big thing. When I was twelve I couldn’t wait to get out of elementary school so that I could be a teenager. Then when I was thirteen and fourteen I couldn’t wait to be sixteen so that I would be able to drive a car... then it was always something else... waiting to get to the next place so that I could be “happy”. I think for me sometimes I get so focused on goals and the destination that I end up not enjoying the journey. As I looked at Granny’s plates the thought struck me that she would probably still be able to tell me where each of them came from and the story that went along with it. It made me want to cherish every stage of my life and Enjoy myself on the way to getting where I am going.
