Valentine’s Reservations...Filet Mignon with Marsala...The Plan is Good.

What's up Guys! We are finally seeing the light at the end of the tunnel with our Gardendale Location. It is like a jolt of pure joy to put the finishing touches on the various projects that we have going on up there all at once. This is where it gets fun for all of us and we are all absolutely amazed with the results! I can’t wait for you guys to see it. I am very excited about the Valentine’s Dinner we are having Tuesday night. This year I made sure to leave space for all the last minute folks, so if you haven’t made a reservation we are doing 5:00 and 7:00 seatings. Call 251-3101 or email James@kairoskafe.com and we will take good care of you. Valentine’s is a time of year that I can really get fancy and throw down with the menu. My top favorite is the Filet, it’s handcut from grain fed beef, seasoned with our “special” Kairos seasonings and grilled to perfection. The best part though is the Marsala Sauce with sautéed mushrooms...its velvety delicious goodness makes the steak just pop with flavors that take my tasebuds into the heavenly realms. Haha. It really is that good. That’s not all though. I am pairing it with the perfect companion, my twice baked potatoes that go with this dish like bread goes with butter. The Chicken Florentine is also my favorite chicken dish, and its even better served with Ziti pasta that is smothered in a rich cream sauce. There is just something incredible about the flavors in this dish, I love chicken, but when we pan sear it and add in the lemon butter sauce it picks up all the golden brown deliciousness in the pan and makes for an incredible sauce that is hard to compete with. The Sweetheart Salmon is also a healthy alternative that in no way skimps on flavor. The handcut fillets are marinated, grilled to perfection and smothered in my delightful strawberry – honey glaze that gives the fish an over the top experience. The Soups are our always-popular Cream of Potato and the Three Cheese Tortellini that I usually reserve for special occasions. The Dessert this year is our decadent chocolate-chocolate cake that is bursting with chocolate goodness and moist delectable cake that is then drizzled with our made from scratch raspberry sauce. The other option is the Strawberry Kobbler that is rich, bursting with flavor, and has the best buttermilk kobbler topping that I have ever tasted. We are paring the kobbler with Vanilla Bean Ice Cream. I’m also going to have a few surprises, and this Valentine’s at Kairos Kafe will be sure to please. I can’t wait!! Well, last week I shared with you guys that for the first time in my adult life I don’t have a plan. I thought maybe you guys would like to know how that’s going. J I am experiencing the presence of Jesus in new and exciting ways that are really almost surreal to me. As last week started off I began to get the sense that maybe I should move to Gardendale. I mean, my lease is coming up in Hoover, and I need to make some decisions. Also as we open the new store I’m probably going to be up there a whole lot so as I pondered it I thought “Well, it makes sense...God is this part of YOUR plan??” I asked our Katering Director, Denise, to see if there were any small houses up there for rent because she lives in Gardendale. On Tuesday she had a list of places for is to look at, so Jeremy and I rode along with her to see what Gardendale had to offer. Well, I didn’t like any of them, and as we were heading back she wanted me to see a little house her friend had for sale. I assured her that now was not a time that I could buy a house, but we looked anyways... it was perfect. The best thing was that its about one minute from the Gardendale Kairos... I kept finding stuff I loved about it. It's an older house. Small. But it has a nice size yard and green grass. A big porch across the front that I love and a patio out back. It's also got like a separate garage and I just love it. It's also about two minutes from the new Kairos. I could walk to work. And it's in a quiet little neighborhood and across the road there is like a stream flowing. Perfect little country place. But again I can't buy anything right now... it’s out of the question. To make a long story short, I don’t really know how it happened, but I’m purchasing the House and I am moving in tomorrow! I can’t believe it! And I love it, but the timing was so fast, and so perfect. I was pondering that, why now, all of a sudden are things happening so fast for me? I've had so much going on it's been like a whirlwind the past year or so. I just keep thinking that things are happening so fast. But in a good way. The other day I said "Jesus why have things always been so slow for me... A process ... But now things just happen like “Boom”. Everything keeps changing? And so fast!" I felt like he said "because you are letting me..." That is incredible for me. I’m pretty sure I have always tried to get my way, even subtly, but now that I am learning to give up all that I am learning that His way is incredibly greater than anything I can come up with!
