What’s up Kairos Fans,
It has been an eventful week here at Kairos as we gear up to open our Second location in the heart of Gardendale. We are so excited about the addition of a small bakery and coffee shop at this location as well as expanding our hours to offer breakfast and dinner for all of you guys! We hope to make Kairos Kafe Gardendale a destination for Kairos Fans all over Birmingham.
This week the Special is Sante Fe Chicken, a dish prepared similar to our Chicken Florentine. It starts with pan seared Chicken Tenderloins that are smothered in a delectable cheese sauce then topped with Mozzarella, Parmesan, Cheddar, and Cilantro…Mmmm… then it is baked to perfection and served on top of spicy blacke beans with tomatoes and chilies… It’s a little spicy, but no overly so, and filled with delicious goodness! I hope you enjoy. The Veggie is a Corn Kasserole that I found in my Grandmother’s Recipe. It is ultimately the best Corn that I have ever tasted! I’ll also be making it this Wednesday on Fox 6 around 8:45 so if you would like the recipe check us out. The Pimento Cheeseburger has been such a hit that we had to ad it permanently to the Specials Menu. I love this burger!
The Kwick Hitter Menu features Meat Baked Ziti (our version of the classic Lasagna), Cheesy Chicken Baked Ziti (our top seller), and Granny’s Poppyseed Chicken Kasserole. I had the Poppyseed this week for Dinner, and it was so good I almost licked the plate! I look forward to coming up with many more new and exciting dishes for the Menu, and I thank you guys for supporting my passion to create good food!
This week I have been doing a lot of reflecting. It seems that over the past few years that God has gone out of His way to show me that He is the one who takes care of me, that He has a plan for my life, and that He has everything under control. I have struggled with that because I want to be in control, I want to know what comes next, I want to prepared, etc.
Sometimes when I go through rough patches in life or go through some kind of rough trial it makes me think that I have missed the mark, or got off track with the plan, or that I have done something wrong… and I think that is a natural way of trying to reason out why things happen as they do… but lately it seems as if Jesus is showing me that sometimes He allows us to go through circumstances that look insurmountable just so that I can realize that I’m not the one in control. No matter what, over the past 15 years as I have been following Jesus, He always delivers me. Every single time.
Yet somehow, I have the tendency to say “Okay Jesus, Thanks! I’ve got it from here.”
Why do I do that? I think its because I feel better if I am the one in control… but really I’m not anyways so I need to give that up. I’ve always bounced between two schools of thought in this area. One thought says that I have to work ,work, work until I am weary and drained to accomplish God’s will for my life. The other says take it easy, relax, sit a spell, and let God do everything… I am learning that both of these thinking patterns are wrong. I tend to struggle with “all or nothing” thinking. It’s either all work or all rest, but the truth that I have learned is that these two schools of thought are actually interwoven and married to each other.
God created me to work “with” Him. So, that means there is work for me to do. I have to find out what that is and get at it. On the other hand, God has his own business to handle. I have to let Him to do His part and in that area I can rest… it’s just that sometimes that’s the hardest things to do because it means giving up control, or at least the illusion of control.
