What’s up Kairos Fans,
It was so good getting back into the groove last week after a week off! I love it that you guys missed us so much when we were gone. It’s good to be back in the swing of things and I am having a blast trying out new dishes and looking for suggestions on what to add to our Dinner Menu in Gardendale. I want to know your thoughts so much that I am giving away Lunch for Two at Kairos Kafe for the most creative answer to this question: “What is THE BEST dinner you have ever eaten?” I look forward to hearing from you, and I will announce the winner next week!
A few weeks before Vacation I came up with an idea for a burger smothered in Pimento Cheese. Sounded good. The problem for me though was that I don’t like pimento cheese and I have never made it. Through a series of fortunate events I was able to test my recipe out at a wedding we Katered, and it was a hit! The next week I carried out my idea for a Pimento Cheeseburger for a Special, and the reviews I got were incredible. Our last day here before Vacation I took home some leftover Pimento Cheese and Ground Beef. That night I made Pimento Cheese burgers and I was so overwhelmed at how good they were that I almost shouted! This week they are back on Special, and if you haven’t trued one then I strongly encourage you to do so! They are awesome. The Fish this week is also a winner, grilled fresh salmon smothered in my Cucumber Dill Sauce. The Veggie is a new play on Cheese Grits that I am sure you will love. The Soups are our ever-popular Cream of Potato as well as a new Soup idea I got last week when I was making Chicken and Dumplings… Creamy Chicken Tortilla Soup! Let me know what you think about it. The Kwick Hitter Menu includes our version of the classic lasagna, Marian’s Meat Baked Ziti, as well as Granny’s Poppyseed Chicken Kasserole and Momma’s Cheesy Chicken Baked Ziti. The Dessert is our one of a kind Coconut Kobbler, a creamy concoction of delicious coconut goodness in a Kobbler form. I hope you enjoy!
Last week in my e-mail I mentioned going through some tough times and learning that I just have to keep on keeping on when the going gets rough. After I typed that e-mail and sent it I thought “Well James, maybe you shouldn’t have shared that… it wasn’t all that positive…”
After that I received an overwhelming amount of responses from you guys thanking me for sharing. That was interesting to me because I always think that when I share my heart that it has to be 100% positive even if I am going through a rough patch. Thank you for helping me understand that’s not the truth.
This has been a neat week of learning new things for me. One is that life is not always gonna be all roses and sunshine. Sometimes there are thorns and thunderstorms (even tornadoes) but what can we do? I have learned that there is power in persistence and that if I just don’t give up then Jesus has a way of working everything out, and it’s kinda neat to watch that happen!
This week almost every book I have picked up, e-mail I have read, or encouraging word I have received from people has said the same thing: “Let me guide you step by step. Yes you are going up the rough side of a mountain but I am right here beside you. Hold my hand. Just keep pressing on and you will be able to dance on the peaks with Me!”
Why is it though that when I’m climbing a mountain I think I need to do it by myself? I am determined that there is nothing in this world that is more powerful than persistence. Persistence is the ability to maintain action regardless of your feelings. You press on even when you feel like quitting.
God, help me learn to lean on you 100% in every situation. May we all be a people who will determine to keep on keeping on!
