The Kairos Ultimate Burger…Pickled Green Beans…Keep on Keeping on.




What’s up Kairos Fans,

I hope that the phrase “out of sight, out of mind” did not apply to you guys last week! It is my prayer that through our absence of being on Vacation that your hearts have actually grown fonder of the Kairos Experience! We have had a great time and we are all tanned, rested, and ready to see all of you this week!

I have had a fun time learning how to can peppers and learn how to pickle things this week! Recently I began to think about what my Mee-Maw used to make this time of year when her garden started producing a harvest. She always had peppers that she put in mason jars that she called “cans” and she always had plenty of homemade “pepper sauce” on hand. When I was a teenager she began adding green tomatoes to her peppers and this was one of my favorite things to eat alongside any dish… I can still recall the taste of those hot green tomatoes and I remember eating them with just about anything! So in honor of all that I watched my Mee-Maw do I have come up with some tasty treats for you guys. The Veggie this week is Spicy Pickled Green Beans, and they are awesome. J.J.’s Special is a play on the recent success we have had with the handmade burgers… it’s called the “Ultimate” Burger and it is gonna make you guys so happy! It’s topped with Cheddar Cheese and then covered in pickled red onions and jalapenos… it’s making me crazy just to think about how good it is! That’s not all though because then it is finished with my made from scratch Avocado Sauce that perfectly balances out the burger and gives it the ultimate taste sensation in burger town! The Fish is also a taste sensation… Fresh Grilled Atlantic Salmon with our Strawberry-Honey Glaze. The Kwick Hitter menu is also very special this week too because it features the delicious goodness of my Granny’s Chicken and Dumplings, as well as Poppyseed Chicken Kasserole and Momma’s Cheesy Chicken Baked Ziti! This week there is an overabundance of delicious goodness at Kairos, so I can’t wait to see you guys!

To put it simply, the last few weeks for me have been rough. Have you ever heard the expression “when it rains it pours”? I hate to give in to that rationale but sometimes it seems like is what is happening.

When I am faced with multiple obstacles or situations that seem insurmountable it makes me want to bury my head under the covers and give up. If I give into that kind of thinking though I know what is waiting for me… the pit of despair, and that is a place that I don’t ever want to be!

I remember when I first started reading the Bible, particularly the book of Psalms, in which David often talked about being in a “pit”. I remember thinking “My goodness, they sure did throw people in pits a lot back in those days!” But as I began to understand what he was talking about, I realized that he wasn’t speaking of a physical pit, but rather an emotional one, and that is something that I can certainly relate to.
It is during these times that I am reminded of all the miracles that God has brought about in my life, and all the obstacles that he has successfully brought me through. Why would He give up and drop me off now? I think I am learning that it is a matter of perspective. I am so thankful for all the people that God has put in my life to challenge me during times of trials to see things from God’s perspective. Do you know that He is never on the throne wringing His hands and saying, “What do we do now?” He always loves me and He is always there for me no matter what the situation looks like. And He always delivers me out of anything that looks like it’s gonna defeat me. Always. Even when the situations look bleak. I heard a preacher one time say that God is always on time, but He’s never early. Interesting.

So, when we are faced with the challenges that life brings, or when we are stepping out into new territories that are unknown, and all Hell breaks loose against us what are we supposed to do? This week I learned something very simple. Keep Going. God has not given us the spirit of “give-up” but a strong, war-like spirit that says “I’m gonna keep going, and I WILL get through this!” After all, at the end of the day, we are in a War. And the only way to win is to never give up. Sometimes the only simple answer is to just keep on going. To the Glory of God.
