Pimento Cheese Burgers... The Ultimate Corn... Renewing my Thoughts...



What's up guys!

This has been an eventful week! There seems to be so much going on with the plans and purposes for our second location, and the excitement of building up our existing location. If any of you have any ideas for Special Promotions, Dishes you would like to see on the Specials Menu, Coupons, etc. then please feel free to drop me an e-mail. We value your input and opinions and I love to come up with new ideas based on your suggestions! This week I did two different burgers on Fox 6 and smoked up the studio... they were not upset with me though because they loved the burgers so much! I have been having so much fun with burgers! This week the Special is our handmade Black Angus Burger topped with our very own pimento cheese... I love this recipe that I recently came up with for a very special wedding we Katered... I have never before even made pimento cheese because I am generally not a fan... but this one was so good that I quickly fell in love with our version of this classic! The veggie this week is an old recipe I found in my Grandmother’s recipe box. She recently moved into a retirement community in Dallas, GA, and they have no need to cook anymore, so she faithfully handed off to me the last recipes that she had in her possession. The recipe that I found was for a shoepeg corn casserole that made my mouth water... we are calling it Granny’s Ultimate Corn Kasserole and she says the recipe will make you famous! Her Rolls are already famous around these parts so I guess it’s okay to put her corn on the map! The Fish is by request, grilled Salmon (always fresh) with our strawberry honey glaze! This glaze, in my humble opinion, makes the fish look rather sexy, if that’s okay to say about food! The Soups are Cream of Potato and an awesome Tomato - Basil recipe that is perfect for this time of year. The Kwick Hitter menu also features Soup and Salad alongside the Pepperoni Baked Ziti, one of our newest Pasta Dishes that we have come up with!

These last few weeks have been somewhat challenging for me. It seems that with all the great things that are happening around here I would be hanging off the chandeliers with excitement, but with progress comes bigger obstacles and somehow I have found myself focusing more on the obstacles than on the huge leaps that we are achieving as a business. When I start focusing on these things I almost always become discouraged, and for me that discouragement can lead to depression if I am not careful.

I have learned through past experiences that if I desire to go forward then I cannot afford to get bogged down with the obstacles that I am facing. If I allow myself to entertain negative thoughts then inevitably I will stop dead in my tracks... in an almost frozen state...and I won’t be going forward. So, for me, watching what I am thinking about, and the perspective I am looking at it from, is vital for me to be able to be and do all that God created me for.

I have learned that if I am in a situation that won't change and I pray about it and then it still doesn't change or if it actually gets worse, then I am probably going through a process that is designed to change something in me. And usually the biggest thing that needs to change is my thinking... It’s amazing how this happens time after time...

“God, what is going on?” I will eventually ask...

“James, you are looking at things from the wrong perspective, and the way you are thinking about it is negative, full of doom and gloom... these kind of thoughts don’t come from me...”

Well, I guess that’s one reason that The Apostle Paul encouraged the Romans to be “transformed by the renewing of their minds” ... I always used to think that renewing my mind was a one time event, like when I allowed Jesus to change my heart and take over my life, but it seems to me that changing the way I think is an ongoing process, and something I need to do daily!

May we all be a people who will seek the will of God even in the midst of insurmountable circumstances, receive his perspective, and change our thoughts daily to His thoughts.
