The Gardendale Burger. Butterfinger Cupcakes. He will never leave me.




What’s up Kairos Fans,

We are another week closer to being a restaurant with two locations! I am so excited about the things we have on the horizon and the new possibilities that are opening up for Kairos Kafe. I have been doing a lot of talking about Gardendale, and we are certainly excited about being in that community, but I want all of you to know that the original Kairos Kafe in Birmingham will still be a premier go-to lunch spot for those of you who are in this area, as well as those who make Kairos a special destination. Our new expansion plans will only complement the original and also open up new doors for all of us…

Kairos Kafe is also now on Twitter. Look us up and follow us if you would like to! Yesterday I made my very first “Tweet” about the Greek Burger we had on Special! I’m also looking for ways to make twitter fun and interesting for all of you so if you have any suggestions, send them my way! The Special this week is called “The Gardendale Burger” in honor of the community that will house our new location… it is a handmade burger grilled to perfection then topped with a grilled green tomato and an awesome slaw recipe that I came up with recently. You’re gonna love it! The Fish is one of my favorite recipes…Greek Style Tilapia baked with a light sauce and feta cheese. I absolutely love the way this one smells coming out of the oven. It’s almost like heaven on a plate! And it’s good for you to boot! It’s hard to beat healthy and delicious, but somehow this recipe pulls it off!  The Dessert is Butterfinger Cupcakes, always a favorite around here, and the Kwick Hitter Menu features Mee-Maw’s Chicken and Dressing. I love making this recipe because it reminds me so much of her… she went to live with Jesus in 2003 but she is always alive in our hearts, and somehow, when I make her recipes, she seems present there as well! Also on the Kwick Hitter Menu this week is a favorite recipe passed down to me by my friend Vickey Pierson… it is a fabulous recipe for smothered burritos that are filled with an awesome combination of grilled chicken, black beans, corn, cilantro, tomatoes, chilies, and a few other twists I have added! I hope you will come out and see me this week for a Lunch full of delicious goodness!

This past week has been a week filled with challenges and frustrations. It seems as if when things begin taking a negative turn, or when the trials of life start coming at me, then somehow I feel like God has left me… in my heart I know that this is a lie, but somehow during these times it is very difficult to communicate that to my head. Somehow I get this feeling that Jesus has “dropped me off…” meaning that it seems as if I am following Him, asking Him to lead, wanting His will, and then somehow he takes me a certain distance and then decides to leave me…

Now, this absolutely not true, but somehow when I am going through a rough patch it has always seemed that way. A few months ago I began asking Him why? He assured me through His Word and through spending time with Him that He never, ever leaves me or forsakes me, but that maybe I have an unrealistic perspective on life and following Him.

I hate it when that happens. When I have it all figured out and He corrects me with one little word… nowhere in the scriptures has He ever promised me that if I follow Him I will never experience troubles… actually one of the last things Jesus promised before He left the earth was that I would have trouble. But then he said cheer up, because He had overcome the world for me!

So, what happens when I am going through rough spots and it seems like He has dropped me off? I am learning that He hasn’t dropped me off at all. I’ve dropped Him off by refusing to receive the Peace that He so graciously provides. Neat lesson. This past week I got the opportunity to put some of what I have learned into practice… it wasn’t easy, but I found that God is faithful when I stay open to receive all that He has for me… and I can remain at Peace during the process.

May we all be a people who will realistically receive the Peace that He offers, when things are going good, and when things are going not so good. He is always there, he always has a plan, and it’s always better than mine!
