In 2006 we opened the doors of Kairos Kafe and Kairos Katering... this was the fulfillment of a lifelong dream for me, and over the past few years I have learned alot about life, leadership, and following Jesus from my heart. I would love to share some of those lessons and struggles, as well as Recipes and other things we have all learned on this journey that we call Building Relationships Around Food...

Smothered Burritos...Coconut Kobbler... and Who Do You Think You Are?
What's Up Guys,
Thank you for all your recent feedback about the new look of the e-mail. We are all so excited about all the new changes coming to Kairos... Be on the look out for our new menus and websites. I need to send out a big thank you to my friend Tim Busbee (a.k.a. Kairos Chicken Busbee) for being such a creative designer and all around awesome "tech" guy! We love the new changes and it is a breath of fresh air for me to be able to let someone who specializes in that area take care of business in such an effective way! We love you Mr. Busbee!
Things are moving right along in Gardendale. We have sent a letter of intent to the people that own Main Street Cafe and we are in the process of negotiating the Lease. The next steps after that will be renovations... then we can open! I am so grateful to all of our Gardendale fans for all the enthusiasm.
I will be trying out some of my "Kairos Kwick Hitter" Menu ideas over the next few weeks, and I would love to hear your feedback on some of the new dishes. This week it's Vickey's Smothered Burritos... its an awesome recipe that I adapted a few years ago from my good friend Vickey Pierson... Flour Tortillas stuffed with fresh black beans, tomatoes, corn, cilantro, juicy grilled chicken, and a few other things... the kicker though is that they are smothered in a delectable sauce and then baked with Mozzarella, Cheddar, and Parmesan... Mmmm!
The Fish is Fresh Atlantic Salmon with a Honeymustard Glaze...the Soup is a savory White Bean Soup and the Veggie is The near famous Southern Fried Broccoli. Another new item on the menu this week is something I dreamed up that I am calling Kairos Coconut Kobbler... It has all the flavors of our coconut cream pie, but I think serving it "Kobbler" style gives it something both unique and delicious!

Who do you think you are?
Have you ever heard a voice saying to you "Who do you think you are!!?" or "You can't do that!" ... "You're not smart enough!"
The first year that we were in business it was almost ruined for me because I was listening to that nagging voice of doubt and fear that said over and over to me "Who do you think you are!" I can remember being in tears talking to my Pastor because I thought I had made a mistake. Of course, he wouldn't let me keep thinking that way, and it was a struggle, but it took me years to overcome the voices of doubt and fear...
A few weeks ago I came across a passage in Exodus that spoke loudly to me about what happened after I got out of the boat... It is talking about how God heard the cries of his kids in Egypt, and how He appeared to Moses to let him know that He had chosen him to lead them out of bondage. Look at his reply to God:
"And Moses said to God, Who am I, that I should go to Pharaoh and bring the Israelites out of Egypt?" Exodus 3:11
That seems like a logical thing for him to say, but then I read the footnote and it blew me away...
"There was something more than humility here; there was a tone of self-depreciation which was inconsistent with a true faith in God's selection and appointment. Surely it is God's business to choose His special instruments; and when we are persuaded that we are in the line of His purpose, we have no right to question the wisdom of His appointment. To do so is to depreciate His wisdom or to doubt His power and willingness to become all that is necessary to complete our need" F. B. Meyer
That was me. Back in 2007. It brought back to mind the struggle, the fear, the unwillingness to make decisions, the depression, panic, and the inability to hear from God... all because I was listening to lies instead of hearing the Voice of Truth. When I listened to lies they stopped me, paralyzed me from living up to my potential and doing everything that God has created me to do...
The parallels between the opening of the Kairos #1 and Kairos #2 are as far as the east is from the west! There is good news now... the truth... and that makes all the work involved so much easier... the opening of the Kairos in Gardendale has been like a breath of fresh air...ahhhh... it is so easy when I allow God to do his job and just make sure I'm participating in the ways that He directs me!
I believe that God created each of us with a specific purpose, and that we are each called to do unique things that only we can do... When I follow Jesus and realize the potential that he has for my life, of course I am blessed, but the mind-boggling thing is that so are others, so is the world I live in, and so is The Kingdom of God.
Who do I think I am today? When those voices come at me now its easy to answer "I am a Son of The Living God, and I can do all the things that He dreams for me to do, through Jesus Christ, who is my strength and encouragement!" The Truth has certainly set me free!
May we all be a people who will choose to listen and believe the Voice of Truth to realize our Potential, our Dreams, and our part in building the Kingdom of God! God Bless You, Thank You for supporting Kairos, and have a wonderful week.
