Juicy Handmade Burgers...Getting out of the Boat...and Home Made Coleslaw Smothered Pork Chops


What’s up Kairos Fans,

What an awesome week it has been around here... actually, it has been an awesome few months as we prepare to make our second location’s home in the beautiful City of Gardendale. At first I was giving us until the end of the year to complete this project, but it has really taken on a life of it’s own with the ball rolling at a fascinating momentum... I am both humbled and awed that God would choose me to lead such a remarkable organization as Kairos...

I hope you guys missed getting my e-mails directly. We are in the process of making some sweeping changes with our website, menus, logos, etc. so be on the lookout for some neat changes.

One of them will be taking place in the next couple of weeks at Kairos Kafe. Some time ago I put out a feeler to you guys about putting in an express lunch buffet for those of you who have to eat in a limited amount of time. Many of you expressed your enthusiasm and I got a lot of positive feedback...

We decided to do it, and even had all the plans laid when I started getting a gut feeling that I was making a mistake... I know that many of you come to Kairos because you love the food, and that is also my passion, but I have found that I get an equal amount of comments about how much people love the atmosphere... I started thinking that if we added a buffet it would change that completely, and that’s just something I don’t want to give up, so after praying about it, I had an idea that would take care of the speed problem for those of you on limited time frames and also preserve the atmosphere for those of you who love that part of Kairos...

We are launching a separate Weekly Specials Menu that we are calling the “Kairos Kwick Hitter” Menu. All you have to do is say you’re in hurry and we will have you fed and happy in 30 minutes. It will have 4 to 6 different choices, all the same price, and will revolve weekly to keep things fresh and interesting! I’m curious to see what you think about it!

Since our inception in 2006 I have had burgers on our menu... to be honest the burgers were really an afterthought and I never really focused on them much... I allowed my foodservice rep to talk me into doing frozen burger patties... they were a high quality product but in the end they were still frozen, pre-shaped burger patties...

Not anymore! We have finally found a way to do fresh burgers even though we have limited space, and my staff and I are absolutely thrilled with the results! They are sooooo good, and there really is a major difference between fresh and frozen. Please forgive me for not paying attention to this detail sooner! I stand corrected at my error in judgment! Bernard’s Black Angus Burger, Ms. Mary’s Associate Burger, and Debbie’s Double BBQ Bacon Cheddar Burger will be handmade from fresh ground black angus beef from here on out. And don’t worry, we haven’t changed the price. I know you will enjoy this fantastic change!

The Special this week is a sandwich that I will be adding to our new lunch menu, The Kairos Pork Chop Sandwich... it is loaded with delicious goodness and the juicy hand cut pork chop is smothered in our signature Honeymustard-BBQ Slaw! The Fish is fresh Atlantic Salmon smothered in a Honeymustard Glaze, and the Soup is one of our heartiest Soups: Chicken, Mushroom, Broccoli, & Rice.

The newest Kairos Kreation in the arena of Side Dishes is Southern Fried Broccoli. It has gotten rave reviews and I love serving it to you guys for the first time! The Dessert is also a new addition, Lemon Dream Kobbler that came about as the result of a dream that our Hostess, the Lovely Miss Corinna Bass dreamed one evening and shared with me... It has also gotten outstanding reviews. I hope you will take advantage of the free dessert coupon this week!

James Making Kairos T.G.I.H. Special

The last few weeks I have been in a state of awe over the way Kairos is growing... it makes me ponder on the fact that God has an awesome plan for my life (Jeremiah 29:11) and that makes me so thankful, but at the same time I think back to those early years in 2004 thru 2007 when Kairos was opening up, when I was in debt up to my eyebrows, and the folks were not beating the door down to get in...

Did God have a plan for me and for Kairos then?? Of course He did, but as we were going through the process of building this business there were times when I got depressed and wondered if I had made the mistake of my life...

It reminds me of the story in the book of Matthew where Jesus was walking on water. His friends were in a boat in the middle of the sea, and when they saw him they thought he was a ghost. The brothers were scared! But, when Peter realized it was Jesus he told him (paraphrase) “Hey if that’s really you then tell me to come out there so I can walk on water, too!”

Then, one of the most amazing things happened... Jesus told him to come on and Peter actually walked on water! How cool is that? But, when Peter realized what he was really doing, and he saw the waves and felt the wind, he got scared and started to sink... but guess what happened? Jesus saved him just like He has always saved me.

The last part of that story makes me think of myself... “When he got back into the boat, the wind ceased.” Mt 14:32

Isn’t that just how it is? Or is it just me? The boat represents my comfort zone. When I get out of my comfort zone, or get rid of my safety nets that I think I need, then the winds and storms of life seem to rage! When God called me out of the boat to start Kairos I knew it would be challenging, I knew there would be sacrifice, but I didn’t really plan on the winds and storms coming at me...

During those formative years I often found myself scared, paralyzed with fear, and unable to move forward. All I wanted to do was cut and run back into the boat! The sad news is... when I did retreat, or head back into the boat, guess what happened? Just like Peter... the winds ceased...

I am so grateful that God taught me through that process that He could take care of me... and now it’s actually very exciting living against the wind instead of cuddled up in my boat. I Love it!!!

Jesus, help us in our struggle to leave the comfort zone of our safe places to abandon ourselves to You with utter delight!
