Chicken Alfredo...Luscious Lemon Cupcakes...and The Next Steps...



What's up,


It has been an interesting start to 2011 and I am very hopeful and full of anticipation as we look towards a new year, a new Kairos Cookbook, and perhaps even a Kairos Kafe near you that will take care of your Lunch, Katering, and Dinner needs...


This week I was working some on my Cookbook, and I almost relived what it felt like the first time I ever made an Alfredo Sauce... It was so awesome, and I loved it, and I felt this sense of power that I was able to make something that tasted so good. Back in those days when I learned something new I couldn't wait to make it for my family. I remember how they raved the first time I ever made Chicken Alfredo for them...(Back then Alfredo Sauce wasn't yet all over the place like it is now)


So, in thinking about The Specials this week I decided to go back to that wonderful memory and hook you guys up with some Angel Hair Pasta smothered in that Authentic Alfredo and then topped with tender pieces of grilled Chicken...I hope you enjoy it, and the Pasta is also angel hair with Alfredo if you want to just try it with something else.


The Veggie is Southern Fried Okra with some special Kairos Seasonings and the Fish is Fresh Salmon grilled to perfection and then layered with Lemon Butter Sauce, Capers, and Sundried Tomatoes...


For Dessert I wanted to do the Luscious Lemon Cupcakes that always seem to get high marks from all of you...I absolutely love this recipe, and I can't wait to get some of those cupcakes!


What do we do when we know that God is calling us to do something, and yet we are afraid or reluctant to take that first step? That has really been the case for me over the past year as I am learning what the next steps are for us here at Kairos...


It takes me back to about ten years ago when God began showing me that I was gonna open up Kairos...alot of excitement and anticipation but also alot of unanswered questions and fears...in those days I would take a step and then quit, take a step and then pout, take a step and then be paralyzed by fear, but even through my stubborness and foot-dragging God showed Himself to be Faithful and on December 06, 2006 Kairos Kafe opened.


I believe this time I want to take a different route, and have fun, and watch what happens. I'm not the one that can really make significant things happen anyways, so why do I act as if the whole world is on my shoulders?
