What's up guys,
What a week it has been here at Kairos! We have had an awesome time Katering so many different Christmas Parties that its hard to keep up with which one is which. I'm not complaining though, because it's so good to be rocking and rolling with you guys, and the responses that we get from you about the food and the service is always very encouraging to each one of us.
If you were a fan of the Thanksgiving Take-Home-and-pop-in-the-oven menu that we did this year then you might want to check out our Christmas Menu. I have chosen a few things that I think you will enjoy. They also make good gifts. With the Holidays as hectic as they are, who wouldn't absolutley love a pan of Kairos Delicious Goodness to pop in the Oven?
And speaking of gifts, we are running a gift certificate special this year: Buy 3 ten dollar gift certificates and get 1 free... and the good news is that there is no limit, so you can buy all you want to fill all your stockings up!
The Specials this week are also something to talk about. The Pork Chop Sandwich, which has been classified by some of you as "the best sandwich I've ever ate" is also one of my favorites. I'm not sure what I like best about it... is it the marinated and grilled boneless Pork Chop? Or maybe it's the Grilled Green Tomato that's laying on top of it? Perhaps it is the superb made from scratch slaw? Or maybe the Honeymustard-BBQ Sauce? I'm not sure, but one thing I do know is that it adds up to some delicious goodness on a plate!
The Fish is Fresh Tilapia that is prepared Greek Style with a light Vinaigrette, Feta, and Green Onions. This is one of the tastiest ways I've ever had any kind of Fish...The Soup is savory Potato-Bacon, and the Veggie is a recipe that I got from a friend of a friend that is called Turnip Green Kasserole. It has all the flavors of the South in it with Turnip Greens, Blackeyed Peas, and Ham that is topped with an authentic Cornbread Crust. I know you will love it!
Oh, and I can't forget to tell you guys about the Coconut Cupcakes that I came up with... I've been trying to make a stellar Coconut Cake for a few years now. I keep playing with the recipe and trying different stuff (like coconut milk and coconut cream), but I have yet to come up with a recipe that really stands out. This year for Thanksgiving my Grandmother asked me to make one for her, and it turned out good, but after tasting it I thought "This cake is good but its just boring..."
Well, yesterday we had to make Coconut cupcakes for a party that we Katered for our friends at The Foundry, so I made a passionfruit glaze to go over them to give that extra little something, and boy let me tell ya, it was the secret ingredient that I've been searching for because these cupcakes are not boring! They're Awesome! I hope you will let me know what you think.
I always try to share something with you guys that I have been learning, or something I'm struggling with... this week I think the thing I want to share is short and simple: How I'm learning to just simply believe in whats in my heart, and follow my instincts. I have had a problem the past several years with procrastination. I'm sure that's something I've always stumbled around with but it glares at you alot more when you are Leading a group of people and running a Business.
The problem is that things seem to pile up on me and I get overwhelmed, so I do what I think I can do and then tell myself I'll go home, get some rest, and go at it like crazy the next day. My main problem with this is that when I go home I can't really rest because I end up feeling guilty or more overwhelmed because of the things that I need to get done.
To make a long story short, I realized that when I procrastinate I am miserable so it's better for me to go ahead and do what I need to do because then I can go home and truly rest because I am fulfilled. I spent some time talking to God about it and then wrote some notes about it in my journal so I could think about it...
A few days later I was looking at some Joyce Meyer CD's and I saw one that said something about procrastinating, so I knew I had to listen to it. While I was listening to it I found myself aggravated by everything she said...it puzzled me because usually I thoroughly enjoy listening to anything she has to say about any number of things. Afterward I spent some time talking to Jesus about why I was so irritated. His reply to me was both weird and interesting.
"The reason you were irritated, James, is because last week I told you everything you needed to know about that subject..."
Hmmm. That's all I need to know? Yeah I guess that is all I need to know if God is taking the time to tell me about it! It made me think how often I have a clear answer to a problem, or a gut feeling about something, but I second guess myself and don't really believe what is in my heart.
