Ham & Cheese Macaroni...Thanksgiving Goodies...and a reminder about where I've come from...



What's Up Kairos Fans,

I want to thank all of you for making Kairos Kafe and Kairos Katering a huge success! It seems like everytime I get a new follower of Kairos they tell me it is because so and so said how good it is...Thank You from the bottom of my heart.

We have had a record breaking week here and I have never been so tired in such a GOOD way. Thanksgiving has already started for us here because so many folks are having us do their office parties. I had an interesting conversation this week with a lady from Alabama Power. This is their first time to use us for Thanksgiving and she said every year she gets complaints that the Dressing is dry... I told her that if my Dressing was dry then I would dress up in a Turkey Suit and go to all her co-workers to apologize.

I can say that with confidence because that is Gladys Whitaker's Recipe for Cornbread Dressing and it has a secret weapon in it that almost guarantees moist deliciousness! I am excited about the menu that we have put together for Thanksgiving and I can't wait to see how you guys like it!

Last night I was here late making Squash Kasserole for an order today and I wanted to make an extra pan to take home for myself because it looked so good. I absolutely love this recipe so that will be the veggie for you guys this week.

The Pasta is also an idea I got from glazing hams last night. How about our macaroni and cheese baked with ham in it? Mmmm...That's gonna be the pasta this week. The Fish is a fresh atlantic salmon with a tangy blackberry glaze and the Soup is our ever satisfying Cream of Potato. You can finish that off with some of our signature Strawberry Kobbler that is sure to hit the spot! The coupon this week is for a free dessert so that will be on us! :O)-

I have been so busy the last few weeks between Kairos, The Foundry, Grace & Truth, and the Life After Prison class that I teach at Donaldson Correctional Facilty. I have the tendency to get overwhelmed and aggravated when I have too much going on, but it is surprising to me how easy it is when I don't worry about what I have to do and just let God be in charge of my life. I really want to live that way for the rest of my life.

The other night I was walking up the walkway to the prison, and because of the time change it was already dark at 6:00. As I was walking up I could see a big ole moon that was shining down over the outline of the prison with the razorwire making a contrast between the moon and the prison walls. It took me back to a memory that I had of that same situation about 13 years ago...

I remembered being locked up in one of those cells, not long after I met Jesus and allowed Him to change my heart, and I remember looking out the little window at The Moon and praying "God, please one day allow me to see the Moon that you made without razorwire in the way..."

Thinking about that made me start to weep and I was so filled with gratitude for the life that God has given to me, but not in a proud and arrogant kind of way. It made me thankful, of course, but it also made me want to never forget where I've come from. Or, as my Pastor tells people "Don't ever forget where God met you!"

May we all be a people who are not only grateful for the lives we have, but for the "mighty long way" that God has brought us from!
