Black Bean Soup...Thanksgiving Offerings...and Contentment at last!


What's Happening Kairos Fans,

It has been quite the week here at Kairos! We have made some changes and hired some new folks and things just seem to be rocking and rolling. Yesterday we actually broke a record in the Dining Room and that gave us all something to smile about.

I love this time of year when Thanksgiving is drawing near and the weather starts to cool off and you start thinking about what you're gonna cook for all your friends and family. For me, it is a double blessing because every year at this time I get to plan a Thanksgiving Menu for you guys. I have it listed at the bottom and I also attached one that you can print.

I am excited about The Specials this week. I came up with an awesome recipe some time ago for black bean soup that really hits the spot on these cold winter days. Contrary to most of my cooking styles, this one is actually one hundred percent vegetarian, although you would never know it from the taste of it, and I didn't really mean to do it on purpose...it just kind of happened that way! That is the soup this week.

The Special is a warm and hearty Cheesy Chicken Baked Ziti that is not only getting rave reviews, it has surpassed the others as our top seller on the Katering Menu. Tonight I was in the grocery store and I noticed a box of some kind of "helper" with the words "Cheesy Chicken" blaring across the front of the box and it really got on my nerves. I love this recipe because it is one that I came up with just playing around in the kitchen.

The Fish this week is a winner! Marinated and grilled Fresh Salmon that is topped with an outstanding Cucumber-Cilantro Sauce that will make your tastebuds sing!

We are also doing grilled Fresh Salmon slathered in Honeymustard on top of Norma's Mixed Green Salad as our T.G.I.H (Thank God It's Healthy) Special. I love this salad, it is actually one of the best salads I have ever eaten, and I'm not just saying that because I made it up. There is just something about the taste and texture of the hot and fresh salmon going up against the coolness of the romaine, spinach, fresh veggies, and cilantro...the honeymustard helps alot, too!

The Kairos version of Banana's Foster (J.J.'s Bananas) was a huge hit this week so I am running it again as the dessert special. There is just something so comforting and lovable about the smell of bananas baking in a rich butter sauce with that crust bubbling on the top, and the fresh whipped cream on top makes it almost irresistable!

This week I had the opportunity to cook the Pepperoni Baked Ziti on Fox 6 and I took two of my newest girls, Corinna & Donya to be my helpers. They were so excited when we got to the studio that I had to give them a talk about acting professional and not going crazy when they saw the TV folks. Well, during our live taping, Mickey Ferguson decided to wheel one of them in front of the camera for her acting debut. It was absolutely hilarious!  I know that I always put some kind of lesson in here that I have learned during the week and nothing gives me greater joy than reading your e-mails when you respond. It actually makes this part of my week a very special time and I want to thank all of you for giving me the opportunity and for reading what I write with an open mind.

The thing that has really stood out to me this week, and absolutley amazed me because I know myself pretty well, is that I am truly learning to become content. That may not sound like a whole lot to you but for me it is huge. I have never, ever been content. I've always looked at what was missing and tried everything in my power to make things happen, or tried to reason everything out until I had a plan that made me "feel" content. But even that could only hold me for a few days until I was off trying to make something else happen.

I have found out the hard way that God never promised me that He would give to me a perfect life. He did promise that He would make my life Beautiful and make my life Significant. The scriptures say that He gives us beauty for our ashes, not perfection.

You see, in Jesus, He has already taken care of the perfect part. Jesus was and is perfect. His blood is perfect. And since he did it for me then I don’t have to try to be perfect. Apart from him I can do nothing of significant value, but with Him I can do all the things that He dreams for me to do, but it won’t ever be perfect. It is my job to make sure that my heart is perfect. What does that mean? Simply that I want His will to be done in my life and that I will cooperate with him.

That really takes the pressure off and allows me the freedom to let Him be in control and let myself be content!

I’m okay and I am on my way. I may not be where I need to be, but thank God I’m not where I was! That should really be the attitude that we all adopt. Why? Because it acknowledges our neediness for God and our absolute faith and trust in His plan for our lives.
