Hearty Comfort Food ...Specials...and a lesson about Trust 10/04 - 10/08/2010

What's up Guys,



I am so happy to feel the weather cooling off! I love this time of year when we are weary with the heat of summer and some cool breezes start floating in... it is also one of my favorite times to be in the kitchen, dreaming up meals that are both hearty and comforting...

I hope that I have met that goal with this week's specials. I have been craving Vegetable Soup, and nobody makes a better Veggie Soup than my Mom, so this week I am connecting with my childhood memories with a delicious Vegetable Soup that will warm you up and make you feel all oozy inside.

The Special is Cheeseburger Baked Ziti, one of my absolute favorites with creamy cheese sauce, ground beef, made from scratch hashbrowns, and lots of cheddar, mozzarella, and parmesan cheese.

The Fish was such a hit this week that I decided to run it again...Fresh Tilapia that we marinate in our Kairos seasonings, then grilled to perfection and smothered in lemon butter sauce with capers and sundried tomatoes...how's that for a little touch of Greece?

This weekend I am Katering a wedding in Helena, and they requested a Mac & Cheese Bar with all sorts of different toppings to choose from, so I thought "What could be more hearty than Mac N Cheese?" so that's the pasta this week.

The Veggie is our near famous Broccoli Kasserole which has been getting lots of thumbs up from you guys. I love this recipe because it started as a recipe that my Granny gave to my then girlfriend. I loved it and have made it alot here, but after I turned it over to Ginger, my Assistant Chef, she put her own spin on it and the current results are off the chain!

The Dessert Special this week is our very own recipe for Strawberry Kobbler topped with fresh whipped cream. This is turning into one of my absolute favorite desserts. It is just so good! I hope you enjoy it. The Coupon is for a free dessert so you have to try it!

As you know from last week, the insurance adjustors totalled my little red truck so I was a little concerned about what we would get as a replacement vehicle. They gave me a generous amount but it wasn't enough to get a new one without getting some payments to go along with it, and at this time we are working hard to become a debt-free business, so I definitely didn't want a payment book.

Jeremy and I went out last friday and looked at several places for something that would be dependable and also suitable for our Katering business. After touring several places and having one guy tell me it was near impossible to purchase what we needed for the money we had, I was a little discouraged.

I decided I needed to go down to my hometown of Phenix City and purchase a vehicle there from one of my cousin's who is in the car business. Blame it all on my roots...

All the way down there I was trying to talk myself into buying a truck that I looked at but didn't really want...It was neat the way that God broke through my thoughts and asked me "James, what kind of vehicle do YOU want?"

Interesting question. I had been praying and trusting God to help me get something that would suit our needs. I never really thought that He would ask me for specifics...

I told him that if I could have anything I wanted then I would love to have a Tahoe. That would be both a car that I would love and it would meet our needs. Then I ended it with "...but I know we don't have enough money for that and I don't want payments..."

When I got to Phenix City my Cousin Scottie had about 5 cars picked out that were in my price range. The first car that he took me to was...you guessed it... a big beautiful Chevy Tahoe! I almost started crying. God really does care about the details of my life if I will just trust Him to be who He says He is!

So be on the lookout around town for the new Kairos Katering Truck. It is a beauty and I love it. It is so much bigger and so much more fun to drive. It also gives us the extra space that we need now that our business is growing. Oh, and did I mention that it's paid for?

It makes me wonder why I can't just let go and trust God to handle everything in my life. Everytime I let go and trust Him, he always blows my mind and does much more than I could even think or imagine.

That is my prayer this week, that I would learn how to Trust Jesus with utter abandonment. It's easy to say or pray the words, but for me it's really hard to practically apply that to my everyday life. So, I'm asking Him to teach me. Will you join me?

May we all be a people that are willing to give up control and allow God to radically, outrageously bless our lives.
