New Cheesesteaks...Tortellini Soup...and some thoughts about perfection...


 
What's up guys,


Thank you all for another great week here at Kairos! The Kairos Cheesesteak was a huge success, and I got so many compliments that I decided to try it a different way this week, so we came came up with The Kairos Chicken Cheesesteak.

It has juicy pieces of grilled chicken that are sauteed with peppers and onions and then smothered with a "Kairos" cheesesauce that is so good we had to make the recipe "Classified" Information. It is served on a toasted hoagie bun.

I'm anticipating some menu changes once we start the Lunch Buffet option, and I thought it would be a good idea to come up with some awesome sandwiches and salads to offer on the menu since alot of the other stuff will probably wind up on the buffet...so be on the lookout for some more delicious goodness in the sandwich arena as we try out some specials on you.

The Soup this week is a blast from the past, but also a winner! I haven't done it in a while but I recently had a request for it: 3 Cheese Tortellini Soup...it has a chicken broth base with basil, green onions, diced tomatoes and tortellini...I use this recipe alot when I am entertaining. I hope you enjoy it.

The Fish is Fresh Grilled Tilapia with Lemon Butter Sauce, Capers, and Sundried Tomatoes. It is sure to please. The Veggie is Branden's near Famous Southern Fried Onion Strings which caused quite the buzz the last time we ran them on Special, and the dessert is Luscious Lemon Cupcakes, which have also gotten their fair share of rave reviews.

For those of you who use our Katering Services there will be no little red Kairos Truck bee-bopping around town anymore. The Insurance adjustors decided it was a total loss, so we'll be getting a new Kairos Katering Truck. I'm not quite sure what yet, but Jeremy and I are going shopping for one this afternoon. We believe that God has something even better in store for us, so that is exciting.

On the other hand, I really loved my little red truck. We have been through a lot together and over the past 3 and a half years it has delivered over 2000 Katering jobs. Last night I was thinking... "Man, I loved that Truck! I picked it out... it was just what I wanted...It was a perfect Truck, perfect for me, perfect for Kairos...just perfect..."

Then that still small voice of wisdom spoke to me ... "Well, James, will you be able to see now that no situation is ever really perfect? Maybe now you can give all that up..."

That might not mean much to you, but for me it was very meaningful because it is something that God has been trying to teach me for years. My Pastor and Mentor, Steve Longenecker, calls it black and white thinking or all-or-nothing thinking, and he has been challenging me in this area also for quite some time.

For instance, at Kairos I have a great staff! A wonderful Team! But not a perfect team...I recently had someone who was harshly criticizing my staff, and it made me angry because I believe we have one of the best teams ever assembled. But neither they nor I, are perfect. I am so glad that God didn't wait until I was perfect before he began making something out of my life!

What should be my natural response to his awesome Grace in my life? Thankfulness and gratitude, of course, but I also have to learn how to extend that same Grace that was given to my imperfect self onto the imperfect world around me...and do you know what? When I do that I am so much more happy and content! It's like it takes the pressure off...Even in the area of little red trucks!

I will close with one Steve's Quotes:

"Fraces Schafer said that people destroy a good marriage just because it's not a perfect marriage. How many of us a ruin a good job just because it is not perfect job? How many of us lose meaningful, good relationships just because they're not perfect relationships?"

May we all be a people who will learn to accept the things we cannot change, have the courage to change the things we can, and ask God for His Wisdom to know the difference.
