In 2006 we opened the doors of Kairos Kafe and Kairos Katering... this was the fulfillment of a lifelong dream for me, and over the past few years I have learned alot about life, leadership, and following Jesus from my heart. Kairos Cheese Steaks...Mom's Chili...and a Rude Awakening about Drinking & Driving...
What’s up Guys,
This has been quite the week here at Kairos. We seemed to have a record number of people coming through the doors or using our Katering services, so that was very encouraging. I want to thank those of you who took advantage of the coupon last week and brought a friend to eat at Kairos. That is really the way that our business continues to grow, and it really humbles me that you guys are such a big part of that.
The Specials this week have really got me excited! I was thinking that if I didn’t work here, then next week would surely be the week to eat here! Actually I can’t wait to sample some of it now.
A few weeks ago we had to get a new grill because our old one was beyond repairing…this time we got a grill with a flat top so that we would be able to do all kinds of new and interesting things that we couldn’t do with the other one. The biggest thing that got me wound up was that we would have a place to make Philly Cheese Steaks!!! Of course I have to put my own unique twist on it, so the Special is not a Philly Cheese Steak…it’s a Kairos Cheese Steak… made with our own Pepper Jack Cheese sauce that is gonna make your taste buds jump for joy!
The Veggie is a new recipe that I dreamed up, a Mixed Veggie Kasserole that you are sure to take pleasure in, and the Fish has an innovative Greek Style Cucumber-Cilantro Sauce that is sure to please. I heard about this one from my friend Leslie Freeman…For the T.G.I.H. we are doing an amped up vegetarian salad that will be a hit with those of you who are trying to make healthy choices.
For the Soup I am using my Mom’s recipe for Chili, which is one my favorites…She made it for me a few weeks ago and it made me think that out of all the food I have both eaten and created nothing compares to my Mom’s Chili…so I wanted to make it for you guys. I hope you enjoy it.
I got a good response this week on the Key Lime Cupcakes, but I still thought there was something missing…I got this recipe from my Aunt Barbara and the first time I used her recipe by the book. I thought they were good but not great, so we went back in and tweaked a few things…Now I believe that they are Stellar! The Coupon this week is for a free dessert so I encourage you to try one!

I have always tried to share with you guys the things that I am learning on this journey we are on here at Kairos… this past Saturday morning I had to get up early and head down to The Foundry to open up so that the students could eat breakfast. It was an early morning for me, and I had to leave by 4:30 a.m. to get there in time.
It never really occurred to me that my early morning might be someone else’s late night and as I was driving down I-59 I really wasn’t thinking about much…then a car doing over 100 miles per hour slammed into me…I have never been in a real wreck before and the sound of it was horrible and so violent…it all happened really fast… my first thoughts were “Well, this is it for me…I’m gonna die” because my truck felt like it was about to flip. Then just as suddenly as the impact happened it seemed as if God just put his hand over me and it stopped. When I got out, even though I was covered in glass, I didn't have a scratch or a bruise on me.
The thing that amazed me the most was that when it happened I wasn’t afraid. That is huge for me because I have always had a fear of death, but when I came face to face with it I realized that I didn’t have anything to be afraid of because I know that God has me in the palm of His hand, and where He is that’s where I am going to be also…
The tragic part of what happened was that the driver of the vehicle that hit me lost his life. There were four young guys in the car and they had been drinking heavily and had probably been out all night.
Initially I wanted to get mad at them for drinking and driving, but as I stood there answering questions and looking at an awful sight it made me think about all the times that I had done the exact same thing or worse when I was at that age. And I remember that the only consequences that I ever thought about were getting a DUI and maybe getting arrested. I wonder if these same thoughts were on this young man’s mind that night?
It never occurred to me or any of my friend’s when we were that age that we could lose our life, or worse, take someone else’s life. Then when they had to go get his Mom it really broke my heart. I want to ask all of you to pray for that young man and his family.
Also, would you pray for the other three boys that were in the car that made it out alive. It is my hope that through this they will be forever changed in a positive way. The Scriptures declare that God is able to take something traumatic and bring something good out of it. I believe that will be the case with these young people.
Also, let’s all of us take the time to talk to all of our young people (and old people) about the dangers of Drinking and Driving. It has the potential to cause so much destruction and destroy many lives…

As for me, after the shock wore off I realized that God is able to protect me from anything that comes against me. Anything. I am determined to stop allowing fear to control me and to go on and be everything that he wants me to be! Be looking for a new Kairos Kafe in the future! I have known for some time that we need to open a new one in one of the suburbs of Birmingham but I have been afraid to make the steps to get the ball rolling. Now I know that I have to do what He leads me to do…
I'll just go on ahead and make a bold statement of Faith that you should be on the lookout for the next 50 Kairos Kafe's!
