What’s up Guys,
It looks like August is almost over with and I am very ready for The Fall to get here. I love it when the weather starts to cool off after a hot Summer...it’s one of my favorite times to get into the kitchen and come up with some new recipes...I’ve got a few to show you this week, along with a few favorites...The Veggie is a Tomato Kobbler that’s been playing around in my head for some time. For those of you who liked the Tomato Pie that I did a while back, you’ll love this one. It is layered with fresh tomatoes, cilantro, a few different cheeses and a crusty, bubbly top. I can’t wait to see what you think!
The Soup is also a new recipe that I originally saw on Diner’s, Drive-In’s, & Dives, which is one of my favorite T.V. shows. It is similar in ingredients to the Cheeseburger Baked Ziti but in a delicious soup... it has chunks of ground beef in a scrumptious cheese soup base with bits of potatoes and other delicious goodness...and then it’s topped with lettuce & tomatoes like a real cheeseburger...It’s so good it’ll make you blow your diet if you’re on one :O)-
The Fish is also a new spin...Fresh Tilapia with Lemon Butter Sauce, Capers, and Sundried Tomatoes... I love the combination of capers and sundried tomatoes...I had never eaten them together until I created Kairos Chicken Busbee, which has also got some great comments from all of you guys...
I’ve gotten a lot of requests this week for the Luscious Lemon Cupcakes Recipe. As many of you know I am working on a Cookbook, and I promise this recipe will be in it! My goal is to finish it by Christmas, and I have recently learned that I may already have someone to publish it! So be on the lookout!
Several weeks ago I got an e-mail from a fella in New York. He is part of a Kairos Ministry up there and he had an upcoming function as the head chef on a Kairos Ministry Weekend. He was curious about what that would look like so he googled “Kairos Head Chef” and our website came up and he also got to read a bunch of reviews about Kairos Kafe way down here in Birmingham, Alabama.
After reading some of our story he sent me an e-mail introducing himself and requesting that I come to New York the next weekend. He wanted me to tell my story and wanted his folks to sample some of our good Southern Cooking.
I told him there was no way I could make that happen on short notice, so he asked me if he could do a phone interview with me to use at his event. I said that would work but I wasn’t sure what to expect.
He called me a few days later and asked me several questions about my life and the history of Kairos Kafe, and I actually had a great time talking to him about it. Later, we said our goodbyes and I really didn’t think that much about it until the other day when he sent me a link to the video he made with our conversation.
It was absolutely the best way that I’ve ever heard the story of Kairos Kafe put together and it touched me deeply. Below is a link. I encourage you to listen to it, but it’s about 15 minutes long so wait until you have the time.

I am always amazed at the Grace of God that has been given to me and just hearing the story really humbles me in a way that I can’t even begin to explain.
