What's up guys,
Another great week is in the history books here at Kairos! We had a blast last Sunday at the "Hot Strings" Bluegrass festival at Sloss Furnace and it was great to meet alot of you there. It was not only fun, it went toward a great cause, supporting the Foundry Rescue Mission and Recovery Center in Bessemer. We are actually currently helping them manage their Outreach Center which not only feeds 250 Students 3 times a day, but does an awesome Outreach daily to the community. They are a great group of people and we are happy to be on board with their mission, which is very similar to ours...
I made 4 different kinds of Cupcakes for the Hot Strings event and for you guys last week here at Kairos. Italian Cream, Butterfinger, Strawberry, and Luscious Lemon. I got many encouraging comments about each of them but there was one that seemed to stand out above the rest, the Luscious Lemons. I actually got an e-mail from one of my customers stating that they were the best she'd ever ate. Now I love those kind of comments. She also asked for the recipe so I told her I was working on a Cookbook and that I would make sure the recipe was in it...
The Specials this week are a blend of old and new recipes. The Cheeseburger Ziti is always a winner. I absolutely love this recipe because it combines all the traditional flavors of a cheeseburger and fries into a fantastic baked pasta dish. It's even topped with the fixin's... chopped lettuce, tomatoes, and green onions...Yum!
The Soup is a new recipe that I dreamed up as a result of my resolve to eat more healthy, whole foods. I'm calling it Collard Green Soup because that's the base, but it has all kinds of other delicious things going on in there...diced celery, onions, and carrots sauteed in just a little bit of bacon...red beans, rice, garlic, fresh cilantro, and a few other things. I can't wait for you to try it. I believe it's gonna be a winner!
The Fish is a familiar recipe around here that's always made you guys happy: Fresh Greek Style Tilapia baked in a savory vinaigrette and topped with tangy feta cheese, green onions, and peppers. I'm trying to eat more Fresh Fish and this recipe is one that will not disappoint. It's so good that you won't even know that it's good for you!
The Veggie this week is something I've never done for you guys here at Kairos: Southern Fried Dill Pickles! It's seems like everywhere I go all over the South someone has a signature recipe for them, so I wanted to unveil the way we do it at Kairos! Be sure to let me know what you think.
The Dessert is, you guessed it, Luscious Lemon Cupcakes and the Pasta is a flavorful Garden Veggie Pasta Salad make with Rotini Pasta and a creamy, cilantro infused dressing. Sounds refreshing anmd delicious to me!
This week I heard an interesting twist on a familiar scripture in the bible that has had me thinking all week... Faith, Hope, and Love are the three things that The Apostle Paul defined as how we should operate in this life as gifts from God. I always think about that and think that it sounds nice, but what if we looked at the opposite of what it is to understand it?
Fear, Regret, and Selfishness would be the other side of that coin. Isn't it amazing the things that we have to fear these days? All I really have to do is turn on the TV or listen to Talk Radio to get all worried and wrought up. It got me to thinking..."Is that really the way that God wants me to live?"
And the funny thing is that it seems like that is the popular way to think these days... I decided I am much more creative, productive, and happy when I'm not worrying and being afraid of something I don't have any control over anyways. And the thing that makes me chuckle is that in the past 15 years, everytime that I put my Faith 100% in what God could do in any given situation, He has always worked it out 100% of the time. So, what's there to Fear?
Regret for me was a big giant in my life that I had to learn how to overcome a long time ago because of the mistakes that I made in my Youth. I learned first hand that my future is not determined by my past and that God can take any life and make it into something significant and beautiful. I was reminded this week though that embracing the Hope of something better and letting go of the past is not a one time event. I have to learn from my mistakes regularly and when a situation changes and I don't like it then I have to learn how to let it go and move on to the hope of something even better...
The Greatest of these is Love. I always heard that the opposite of Love was to hate, and it includes that, but Biblically the opposite of Love is Selfishness. It is impossible for me to Love God or others if all I have on my mind is myself...this even includes my problems...me, me, me will make me miserable. Why? Because if I am not reaching out and connecting with others on a regular basis, then I end up isolated and bored to tears, unfulfilled and lonesome. But, when I do reach out and love others then all the "me" problems seem to take care of themselves.
May we all be a people who practice Faith, Hope, and Love and refuse to live in Fear, Regret, and Selfishness!
