What’s up Guys,
Since the last time I talked to you guys I have had a wonderful vacation, turned another year older, and got a nice tan. The Beaches down in Destin were absolutely beautiful and there was not a trace of oil or tar balls from Destin to Panama City. We had a great time.
I loved trying the local spots and tasting new dishes. The seafood was absolutely great and everything was so fresh... I’ve come back with a lot of new ideas and I can’t wait to try some of them out on you guys.
The Soup this week was inspired by my garden at home and my trip to Florida... Garden Vegetable Soup in a savory broth with plenty of crunchy veggies...
The Veggie this week is a new concoction that I pulled out of my head that combines the delicious goodness of sweet summer corn with broccoli in a savory sauce topped with a Kobbler crust... mmmmm... look out Paula Deen!
The Fish was also inspired by my trip. Pan seared Juicy Tilapia with our tasty lemon butter sauce and fresh cilantro. I’m sure it will be a winner!
It is so neat how your perspective can change after you have gotten a break. I am so thankful for this week. It has been a wonderful gift!
Last week a man came in and asked Mary if I could cater his son’s after-rehearsal dinner on Friday the 9th. I said “Tell him we’ll be closed all week.” Well, she didn’t look like she wanted to tell him so I went out to talk with him.
His first words were “My son is getting married and he LOVES Kairos. He said we had to have the Cheesy Chicken Baked Ziti...” I started to tell him that we would be closed, but then I realized that I would be getting back to Birmingham on Friday, and I hate to disappoint a fan of Kairos, so I told him I would do it.
Branden and I cut our trip short by a few hours and came in to do the ordering for next week and prepare the food for the after rehearsal dinner and we had a blast! Now I’m headed to the bustling town of Phenix City to visit family and finish up my vacation.
I have some ideas for some upcoming things at Kairos and there is one that I would appreciate your feedback on... When I question people about lunch at Kairos, I sometimes get the idea that it takes too long to come in, be seated, order drinks, choose an entrée and then wait on your food. We do our best to get the food out as quickly as possible, but I am realizing that some folks only have 30 minutes for Lunch...
I have been playing with the idea of offering a Kairos Express Lunch Buffet. We would still have the menu for you to order from, but if you were in a hurry you could just choose the buffet and start eating in a jiffy. We have had a lot of success over the past two years with our Mother’s Day and Easter buffets, and to be honest, I absolutely love cooking for a buffet.
The possibilities are endless. I could do so much more than what I am able to do now. For instance, I really want to do a Signature Kairos Country Fried Steak but I know we can’t get it out fast enough during lunch... but with a buffet we could pull it off... not to mention being able to experiment with different breads and veggies and salads and kasseroles...
It’s just a thought, but it has me excited and I would love to know what you guys think. And again, I wouldn’t be taking away your menu option, just adding a buffet option. I look forward to hearing from you guys on this subject.
Well, I can’t wait to see you this week in Kairos! Mary is back with us and Dorothy is taking the week off for a family reunion, so I will most likely be playing Host and Cashier. That’s always fun for me because it means I get to see you guys face to face.
