Fresh Veggies...and A Fresh Look At Daily Life...


What's up Kairos Fans,

It has been another wonderful week here at Kairos. According to Jimsey at MagicCityMoments.com we are halfway through a very hot summer. The heat and humidity may be loathsome for us, but it sure is doing wonders for the fresh vegetables that are popping up out of the ground.

After a visit to the Farmer's Market last week I got a lot of inspiratipn for this week's Specials. The soup is Roasted Corn Chowder that I dreamed up after cooking some fresh corn with ciantro butter on the grill. Mmmmm it was so good, and after eating it I couldn't get it out of my mind how good it would taste as a Soup.

The Veggie is an idea that comes from my childhood. My Mee-Maw would go to this place on the outskirts of Phenix City and come back with bags and bags of fresh field peas, butter beans, and blackeyed peas. As kids, our job was to shuck all those peas... we hated to see the bags show up, but loved the product of our labor because she would freeze them and cook them all year round.

At the Farmer's Market this year I found a farmer with peas already shucked! I was so excited that I had to buy some. I went home and fired up a sautee pan and rendered a little bacon, onion, garlic, and celery before searing the peas. Then I added some fresh Okra and Tomatoes out of my garden. It was so good, and I could feel my Mee-Maw smiling down on me.

I ate those peas almost every day this week! My Mom had some and declared "J.J., if you would cook me something like this all the time I would never eat another hamburger!" That's the best compliment you can get from my Mom! She said it made her think of her childhood.So I had to cook some for you guys!

The Fish is pan seared fresh Atlantic Salmon with a savory honeymustard glaze...and the Pasta is Linguine with Alfredo Primavera...tasty Alfredo Sauce paired with the goodness of fresh vegetables...The Special is one of your top favorites, Momma's Cheesy Chicken Baked Ziti.

The Dessert Special is a new one: Coconut Cream Cupcakes. I can't wait for you to try them. This is a recipe I've been playing with for a while but I couldn't get it just right until I found some coconut milk and coconut cream that really gave it what I was looking for. I hope you will enjoy them.

I am looking forward to gettingto know some of you better. Now that I have a trained staff it is easier for me to spend time in the Dining Room during lunch to meet some of you face to face. That has really been a blessing, and I look forward to meeting many more of you in the future!

 The Following is from an e-mail I got this week from a friend that really touched me and made me think how fruitless regret is and how each day of my life is a gift that has something special in it, if I will look for it...

A friend of mine opened his wife's underwear drawer and picked up a silk paper wrapped package: "This, - he said - isn't any ordinary package." He unwrapped the box and stared at both the silk paper and the box.

"She got this the first time we went to New York , 8 or 9 years ago. She has never put it on; was saving it for a special occasion. Well, I guess this is it.”

He got near the bed and placed the gift box next to the other clothing he was taking to the funeral home, his wife had just died. He turned to me and said:

"Never save something for a special occasion. Every day in your life is a special occasion.”

I still think those words changed my life.

Now I read more and clean less.

I sit on the porch without worrying about anything.

I spend more time with my family, and less at work.

I understood that life should be a source of experience to be lived up to, not survived through.

I no longer keep anything.

I use crystal glasses every day.

I'll wear new clothes to go to the supermarket, if I feel like it.

I don't save my special perfume for special occasions, I use it whenever I want to.

The words 'Someday...' and ' One Day...' are fading away from my dictionary.

If it's worth seeing, listening or doing, I want to see, listen or do it now.

I don't know what my friend's wife would have done if she knew she wouldn't be there the next morning, this nobody can tell.

I think she might have called her relatives and closest friends. She might call old friends to make peace over past quarrels.

I'd like to think she would go out for Chinese, her favorite food.

It's these small things that I would regret not doing, if I knew my time had come.

Each day, each hour, each minute, is special.

Live for today, for tomorrow is promised to no-one.
