Specials with a Summer Theme...and a Squash Kasserole Recipe...



What’s up Guys,
                            It has been a great week here at Kairos! Thank you to all of you who make Kairos a part of your week. We truly appreciate each of you!

Just a heads up for you: Kairos Kafe will be closed the week of the Fourth of July so that the Staff and I can all have a Summer Vacation. The dates are Saturday July the 3rd through Sunday July 11th. We will reopen on Monday July 12th at 10:30 a.m. all tan, rested, and ready to finish out 2010! You will also be hearing about some new developments that are coming to pass that I am very excited about...

In my family we didn’t take a whole lot of Vacations. They were few and far between, to say the least. For most of my life I never took Vacations either, but now that I have grown older I have learned their value. I know that we all say we can’t afford it, but it seems to me that I almost can’t afford not to take some kind of break during the year because it makes the rest of the year so much more creative and energized.

The Chicken Cacciatore was a big hit this week in the Kafe. I have decided to run it again next week since you liked it so much. The Fish is a very summery tasting offering...Salmon with a Blackberry Glaze...I can almost smell it crackling in the pan... and when you combine the savory goodness of fresh Atlantic Salmon with the delicious goodness of blackberries you can’t help but come up with a winner!

The Soup is one that you’ve always given high marks to.... Chicken, Mushroom, Broccoli, & Rice...Mmmmm... It sure hits the spot. I came up with this Soup almost by accident earlier this year and I love to make it for you guys.

Squash Kasserole is the Veggie because it has been requested several times by you guys over the past few weeks. It’s a perfect time for Squash Kasserole because the squash are growing on the vines. I once heard Paula Deen say that every good Southern Cook had to have a Squash Casserole Recipe, so at the bottom I’m sharing my recipe with you. It’s an original one that I came with by playing with the traditional recipes. I hope you enjoy it!

The T.G.I.H. Special (Thank God It's Healthy) is also a light, summery meal that is one of my favorite Culinary Delights. The Salmon is cooked in a honeymustard glaze and then rolled onto the fresh mixed green salad just seconds before we serve it to you...

The Dessert this week was requested by the lovely Miss Lenora because she said we needed a nice, light, summery dessert. I’m confident that we can satisfy that need with Helen’s Coconut Pie because is always a winner!

When I write this e-mail every week, all around me I sense people that have the potential to do great things. The most important question is how do YOU see yourself? How can we respond to God when he is revealing how valuable we are? How can we encourage others to see how valuable they are?


Kairos Squash Kasserole

4 cups sliced fresh yellow squash
1 large red onion, diced big
2 pieces uncooked bacon, diced
1 cup mayo
2 large eggs
1 cup cheddar cheese
1 tablespoon heavy cream
3 cups soft bread crumbs *see note on the bottom
1 tablespoon unsalted butter
½ teaspoon minced garlic
Sea Salt
Cracked Black Pepper
Cracked White Pepper

Preheat a large sauté pan, and add bacon, butter & garlic. Cook on high heat for about 30 seconds, just long enough to get a good sear on all of it. Add in squash & onions and cook until onions start to become translucent. Remove from the heat and transfer into a large mixing bowl. Add in Mayo, Cheddar, Eggs, and heavy cream. Mix together with a spoon until ingredients become uniform. Add salt & pepper to taste, and fold in bread crumbs just until they are incorporated into mix.

Transfer mixture into a 9x13 casserole dish that has been sprayed with cooking spray or well oiled with oil or butter. Spread out evenly and sprinkle cheddar cheese lightly over the top. Cover with aluminum foil and bake in a 375 degree oven for 30 minutes. Uncover and cook just until cheese browns.

Serve immediately or cover and keep warm until you want to serve it. Enjoy!

*I use leftover rolls from the Kafe to make my breadcrumbs, but any soft untoasted breadcrumbs will work (leftover rolls, biscuits, or any soft bread) I have found that Italian Bread Crumbs or Panko Bread Crumbs do not work well with this recipe.
