Buffalo Chicken Ziti...Strawberry Lemonade Cake...and some thoughts on change...
What’s up Kairos Fans,
Wow! What a week it has been. Summer is here, and before we know it Vacation time will be here. This year sure has seemed to zoom by...
I am excited to tell you about some of the Specials we are doing this week...
For those of you who like to eat on the spicier side of life, the Buffalo Chicken Baked Ziti is just the dish for you. As many of you know, I love concocting new baked pasta dishes and I have been going over this one in my head for quite some time... my inspiration was buffalo chicken wings, and about a year ago I came up with a soup along these lines that has been very popular here at Kairos.
It is spicy, but not too spicy, and it has all the delicious flavors that you would find in traditional Buffalo Wings... the pasta is smothered in a buffalo cream sauce with tender pieces of grilled chicken, mozzarella, and blue cheese, and it is topped with diced celery... Mmmmm, it is good!
The Veggie is a Hashbrown Kasserole recipe that I got from my Grandmother earlier this year. Actually, when she gave it to me I didn’t like the sound of it so I never planned on making it. Then my Aunt Denise began raving about how good it was so I decided to give it a try. It was awesome, and has since then replaced my old recipe for Hashbrown Kasserole.
Originally, I actually only did it for Breakfast, but since I added it to my Katering Menu several of you have ordered it as a Lunch Side Dish, so I thought I would try it out in Kairos to see what you think about it!
The Dessert Special is also a brand new recipe: Strawberry Lemonade Cake. It is fabulous with chopped strawberries inside of the luscious lemon cake that is covered in a lemon-cream cheese icing with lemonade glazed strawberries in the filling and on top! This week I was preparing a lesson for a class I’m leading called “Life After Prison” at Donaldson Correctional Facility. This class is really neat to me because I am going through the process of communicating with a group of men what I did to prepare for life after I got out of Prison.
The one thing that sticks out to me is that I had a lot of things that I needed to change. As I was preparing, I had to ask myself how did I really change?? Was it Magic? Not at all! It was a long hard process... and it is still a process...
For me it started with changing the way that I think. I had to embrace new ideals and continually learn new attitudes. I finally agreed with God that I didn't know everything, and if I really had it all figured out the way I thought I did then how did I find myself in prison? By doing things my way. Period.
I could never change the way I was without first changing the way that I thought, and then I had to learn how to Embrace The Process of change.
Most of us want to skip the process and embrace the results. We want to change our circumstances, but a lot of times we don't want to change anything about the way we think or do things. If I have learned anything over the past ten years it is this: If I want to change the way things are or the way I am then I have to learn how to embrace the process of change. I have to agree with God and allow it to happen, over time.
I have learned that if I am in a situation that won't change and I pray about it and then it still doesn't change or if it actually gets worse, then I am probably going through a process that is designed to change something in me. Does that mean we just have to suck it up and endure it? Maybe. It depends on the way you think about it. I have learned to pray this way:
"God, whatever it is that I need to learn, help me see what it is and learn it so that this situation can change..." nine times out of ten, it is something about the way that I am thinking that needs to change, and if I cooperate with God, and learn the things I need to learn, then the circumstances seem to take care of themselves. This is an area that I have to constantly keep my mind renewed about.
May we all be challenged to think about what we are thinking about!
