The Unveiling of the Chicken Busbee... and growth under pressure.


What’s up Kairos Fans,

                                       It has been an awesome week! Our Easter Buffet was a huge success, and it was a blessing to have you here with us! A friend of mine took a lot of pictures and they are all posted on our Facebook page if you would like to check them out. Thank you to all of you who were here, and I hope you all had a great Easter Sunday whether you were here or not! If you missed it, we are doing it again for Mother’s Day in May!

I have a few new recipes to send your way this week. Kairos Chicken Busbee was a recipe I created when I heard a new friend of mine, Tim Busbee, describe a chicken dish he fell in love with when he lived in Baton Rouge. I came back to my kitchen, whipped up a batch, and took it to him. The results were great! He loved it, and so did my staff and I... so now that this new recipe has gone through the proper channels, it’s time for you guys to give it a try...

It’s a really simple Greek recipe for pan seared chicken with a white wine sauce, capers, Sundried tomatoes, and pasta. I love it, and I hope you will, too! If you would like to watch me prepare it on Fox 6 with Janice Rogers, just click on this link.

James Cooking Kairos Chicken Busbee

The Salmon this week is pan seared with a white wine cilantro sauce. I love this recipe, and I love the fresh taste that cilantro gives this dish... it’s incredibly delicious, and good for you to boot!

The soup is something that could have come out of my Granny’s Kitchen when I was growing up... it’s Ham & Bean Soup that is both hearty and delicious... the veggie is Kairos Creamy Cole Slaw... and the dessert is the luscious lemon cake, which is always a winner! The Strawberry Kobbler has done so well that we have decided to run it all the time indefinitely. So, if you find yourself craving it, then we’ll have the goods for you here at Kairos!

I have had an interesting couple of weeks dealing with the growth of Kairos Kafe, and learning to grow as a leader. Most of you only see what goes on in the Kafe Monday thru Friday, and you may not be aware of all that my staff and I are doing behind the scenes. Actually, our Katering business is booming, and in the years that we’ve been open, it carries about 65% of our total sales.

In addition to the Kafe and Katering, we have several contracts with non-profit organizations that we provide meals for every day of the week. Well, to top that, I’ve had an opportunity come open for us to act as a consultant with another organization, and we have recently added that to our growing business. I stand amazed at the ways that we are growing because most of them are in ways that I never would have imagined. God is neat like that...

He always surprises me with plans that I couldn’t come up with...

My staff is doing such an awesome job that it makes me want to cry... I truly have the best staff in the world! I told them the other day that my worst day at Kairos with them was better than my best days in other places with other personnel I have worked with.

Well, with growth comes growing pains... most of these have to do with me and my ability to lead, so the last few weeks have been both trying and fulfilling. It brings to mind a familiar scripture from the book of James:

“Consider it a sheer gift, friends, when tests and challenges come at you from all sides. You know that under pressure, your faith-life is forced into the open and shows its true colors. So don't try to get out of anything prematurely. Let it do its work so you become mature and well-developed, not deficient in any way.” James 1:2-4 (The Message)

During my times of talking with God, I let Him know that I’m not quite to that place where I can thank Him for trials (is anybody to that place?) but I am thankful of what He is teaching me and what he is doing in me... which is to develop patience above all... any of you who know me on a personal level know that is something I struggle with.

I’m learning that when I pray “God make me love people more...or...make me a patient man...or a kind man...” that God doesn’t just zap that stuff down to me...

I can’t tell you how many times I have prayed in “faith” and “believed” that God had changed an attitude or a struggle, and in my mind, I knew that I would never have trouble being kind again, but then it usually didn’t last for 24 hours...

It is interesting that the scriptures call these things I want to possess the “Fruit of the Spirit” What does fruit do? It grows.

I’m learning that if I want to be all that God wants me to be and have all that He wants me to have, then I have to learn to “grow” that fruit during the tough times. So, I’m not thankful for tests and trials, but I am thankful for what they produce when I cooperate with Jesus!
