Fresh Herbs...Mother's Day Menu...and a Reflection on Loss...


What’s up Kairos Fans,

                                      Spring is in the air, the pollen (finally) is getting all washed away, the birds are singing, and the flowers are starting to bloom. I love this time of year when everything seems to be brand new and gets a fresh start. I love the smell of grass getting cut, (or mowed, if you are from up North) the smell of the gardens getting watered as the steam rises off of the fresh pine mulch, and the smell of freshly picked herbs that make every dish taste fresh and delicious.


I told Jeremy today that I love fresh herbs so much I might just name all my kids after some of my favorites. Just a thought... I put together the menu for our Mother’s Day Buffet that we’re doing here on Sunday May 9th. It is at the bottom and I have also attached a copy. Make your reservations early though, because last year I had to turn a bunch of folks away.


The Chicken Busbee has been such a hit that I had to run it on Special again this week. It is really a good, quality dish. I love the smell of the white wine and the cream when a plate of it goes by... definitely a “Kairos” moment!


The Fish is pan seared Fresh Atlantic Salmon with a Raspberry Glaze, one of my favorites, and the Soup is a new twist I’ve come up with that has sautéed mushrooms, broccoli, potatoes, and a lot of fresh herbs. You guys always love my soups, so I hope you enjoy this one.

I wanted to do something really fresh for the veggie, so I’m putting together a cucumber and tomato salad with lots of fresh herbs. I know you’ll love it!

Today was Branden’s Birthday, and I always try to make a cake for each member of the Kairos Team, and for the third year in a row I made him a Strawberry “Tall” Cake. After seeing how beautiful the strawberries were I decided that you guys needed a strawberry cake, too, so that’s the dessert special this week.


I love working in the yard, and I love to grow fresh herbs and vegetables. Besides cooking, it is one of the most fulfilling things I can do with my time. This week started out with new life. I dug out a plot at home and planted tomatoes, peppers, squash, zucchini, cucumbers, collards, spinach, turnips, watermelon, cantaloupes, and a few other things. (Did you know that if you plant marigolds and sunflowers around your garden it will help keep the bugs out?)

For the vases on the tables at Kairos I planted sunflowers & zinnias. And, in the pots outside of Kairos I planted basil, oregano, thyme, tarragon, etc. so we are ready to go!


Then, on Monday, I received news that my Dad’s youngest brother, my Uncle Roger, had passed away. It was a shock to me and I was somewhat dumbfounded, but my biggest concern was for my Grandmother and for my cousins (his daughters and son). I spent a lot of time thinking about my Uncle Roger, and what he had meant to me while I was growing up, and the parts that he played in my becoming a man.

For some reason I couldn’t get my garden off my mind, and it seemed surreal that I was planting new life and at the same time experiencing death. I’m not sure, but somehow that comforted me. Really, that’s what life is all about. There are many different seasons, and unfortunately one of them is death. But I know and have witnessed that Jesus is present with us even in that.


Yesterday my family had a wonderful celebration of the life of Roger Jones. I had to keep asking myself if I told him enough that I loved him, did I live out and communicate my faith enough, did I spend enough time with him...


God answered me during the service and I was able to let that go, but it gave me another thought... we never know what tomorrow will bring, so we have to tell our loved ones that we love them on a regular basis, and if we think something good about someone, even if it is small, we should open our mouths and tell them!

I thought of many things yesterday that I could say that Roger taught me, some of them huge, but I wished that I could tell it to him. So, in closing, let’s go tell it to the ones that have meant something in our lives.
