Easter Menu... Good Reports... and living from the Heart that Jesus gave me...


What's Up Guys,
                            This has been a great week for us at Kairos! Yesterday, an old friend of mine ate lunch in Kairos. He used to be my Boss at my first job in Birmingham, waiting tables at Rossi's. His degree is in Food and Beverage Management, and he has worked at some of the best restaurants and Hotels in the country... he's not easy to impress... well, he ordered the Cheesy Chicken Baked Ziti and Fried Green Tomatoes, and his comment was that it was so good that he wanted to pick the bowl up and lick it!! I told him to go right ahead... we aren't that sophisticated! On his way out the door he said he had one piece of advice for me and Kairos... my stomach tightened up as I waited for him to tell me what he thought we were doing wrong... but to my suprise and utter delight, his advice was simply "Don't Change A Thing!!" Wow! That made my day!
 
The Specials this week are getting me hungry... the Cheeseburger Baked Ziti (which is fast becoming a favorite) has our signature cheese sauce, ground beef, tender slices of hasbrowns, and loads of cheese. We top it with diced lettuce and tomato to give it that Cheeseburger feel... I love this recipe, and worked hard to perfect it because at first it just seemed as if something was missing... until the day that I decided to try throwing hashbrowns in... that was what was missing... it really finishes it off well! We serve it with a Salad and Granny's Rolls.
 
I'm trying a different veggie this week as well, Sweet Potato Fries that are finished off with a dusting of our "special" fry seasoning and brown sugar. I've had so many comments about the Strawberry Kobbler this week, so I'm running that as a dessert special, and we may have to make that one a permanent fixture on the Lunch Menu. If you missed it this week, you can always order a half pan or a pan of it just by giving me a call.
 
Because of the Huge success we had last year with our Mother's Day Buffet, we have decided to do an Easter Buffet this year. The Details will be at the bottom, and a menu is attached. I do encourage you to make reservations. Last year I had to turn away a number of folks just because we ran out of room. I never knew how much fun it could be to cook for a Buffet... it's almost like cooking for family, and it is exciting for all of us. After finalizing the menu, I was looking over it and I thought... "Wow! I want to go eat at Kairos this Easter!!"
 
This past Sunday we had our very own Missionary (from Grace & Truth) speak to us about his work that he is doing in Nigeria. He had lots of pictures to share and stories to tell us, and it is so neat to see what God is doing through these guys. I picked up on a few key phrases that he said: he talked of his passion and desire to do what he is doing, and he talked about how fulfilling it was to him to accomplish God's call on his life...
 
For me it was both encouraging and inspiring, and made me want to dedicate all that I have and all that I am to fulfilling God's call on my life. Many years ago, this wouldn't have been my thoughts. I would have sat and listened to him speak, then beat myself up because I wasn't doing anything that spiritual...
 
It's funny to me how we do that. Maybe that's why the scriptures tell us not to compare ourselves to others... it makes me think of the last chapter in the Book of John, when Jesus was telling Peter some of what he would go through as a result of being His Disciple...Peter's immediate response was "What about John? What is he gonna have to do Jesus!!?" Basically Jesus told Peter that wasn't any of his business.
 
Over the years, I have found out that God has a purpose for my life, but it's not coming to pass as a result of guilt, its coming to pass as a result of passion... I am finally beginning to do the things that I believe I was created to do. Years ago, I knew that I had a call on my life, and that one day I would be in some type of ministry, but I had a narrow view of what that meant. I thought it meant being a preacher...
 
But guess what? I hate talking in front of people... I can do it, but its not a strong point for me... on the other hand, I love to write, I love to Cook, I love to help others learn to Cook, I love working with people that have been in prison (not just physically, but emotionally and spiritually) and I love to help other people find a transformational relationship with Jesus. Today, I am doing all of that, and for the first time in my life I feel content. I believe it is a contentment that comes from doing what God created me to do, and taking joy is seeing others do what God created others to do, and supporting them in what they do.
 
I believe that if we all would find that heart's passion and run after that, then the world would be a much more wonderful place. There are alot of folks who have influenced my life. My friend Tonya comes to mind. She has a heart's passion for helping people with disabilities, and she does that for a living. Where? Right here in Birmingham. Because of my relationship with Tonya, my whole view of disabled people and people with mental illness has radically changed.
 
I have a wonderful young man who works with us who has some mental problems, and He comes in every morning with a big smile on his face, and love for all of us, and He makes Kairos a better place to be at just because he is there... I say this to my shame, but years ago I would have avoided him. Today I love him as someone who is like member of my own family.
 
I could go on and on about the countless people who have changed my mindset just because they were doing what God created them to do. I encourage all of us to look into our hearts, find out what that passion is, and quit beating ourselves up because we're not doing what we aren't designed to do!
