A "Kairos" Time of Year...


What’s up Kairos Fans,

                                        Well, it is that time of year again, and the days and weeks heading up to Valentine’s Day has always been one of my favorite times because it gives me the chance to do something special with food... for many years, those plans were made for someone else’s business, but now, for the fourth year, I am so excited and grateful to be making plans for my own restaurant, and we’ve always tried to make it a “Special - Kairos” time for you guys... and I believe this year will be the best one ever!!

Our menu includes Soup, Salad, Entrée, Dessert, and a neat concoction I like to call “Sweetheart Punch”. For the soups I have chosen a spicy one and a savory one, Black Bean Soup with tomatoes & Chilies, and our ever popular Cream of Potato...

You will also have a choice on the salad selection because I know that some folks just don’t want a traditional salad... so in addition to our Mixed Green Salad with our signature Raspberry Vinaigrette, you can also choose our famous Broccoli Salad.

The past four years I have gotten rave reviews on our Filet Mignon with Marsala Wine sauce and mushrooms, so I’m not going to change that one bit... Last year my Pastor even included his “Kairos Filet Experience” in his sermon the following Sunday!! I love cooking Steaks, but I rarely have the opportunity because most people won’t choose them as a lunch selection... I’m pairing the Steaks with a Savory Twice Baked Potato.

The Chicken Florentine, in my opinion, is one of our most elegant dishes, and sometimes when I see one going by on a plate, the beauty of it takes my breath away... I know some of you may find that silly, but food is my Art, just like clay is to my friend Nelson... I’m pairing it with Fettuccine with a light cream sauce because the pasta is out of this world mixed with the delicious goodness that’s in the Chicken Florentine.
 I’m excited about the Fish that I chose this year... Fresh Atlantic Salmon served Greek Style, baked with a light vinaigrette, feta, peppers, green onions, and fresh strawberries... mmmmm.... over the past year I have discovered the joys of both baking Fish, and seasoning them in the Greek fashion that my ancestors have been doing for centuries... I’m pairing the fish with fresh green beans that are perfectly seasoned...

The Desserts are also something special... a new recipe that I came up with for Strawberry Kobbler that I’ll be serving with vanilla bean ice cream, and a Chocolate-Chocolate Cake that will knock your socks off!

And of course we can’t forget about Granny’s Rolls...they will be here in abundance with plenty of Spunky Hollow Cream to go around... and I will have a few surprises for you as well...

But, that’s not all... Our very own “Redemption Row” will be playing beautiful acoustic music to make the atmosphere a remarkable one... I am so proud of these guys, they raised almost five thousand dollars last Sunday night to help the people of Haiti.

New on the menu this week is the Lemon Icebox Pie, a spin that I learned from making the filling for the lemon cake we had last week... Oh, and by the way, I have never made so many cakes in one week!!! You guys went almost fanatical about the cake... Thank You!!

I have also added a new selection to the Weekly Specials that I am calling The T.G.I.H. Special (Thank God, It’s Healthy!!!) Over the past few months I have been committed to eating healthy and getting my body in tip-top shape, and after a few days of a grueling diet, that still small voice told me that if I kept it up my diet would only last a few weeks, so I went about the task of creating for myself some dishes that are both healthy and delicious and I am so stoked about the results that I want to make them for you guys!! So, look forward to a different one each week!

Thank you for supporting Kairos, and I hope your Valentine’s Day will be extra special whether you choose to spend it with us or at another place...and for those of you who may be alone this Valentine’s... I know that can be painful, but I encourage you to reach out to the ever-present God and allow Him to be your Valentine through experiencing a real and vital relationship with His Son, Jesus, who loved us and Gave Himself for YOU...
