Chicken and Dressing and a Lesson on being happy today...

What's up guys,

                            Well, it was a wonderful Valentine's Dinner Sunday Night. If you were here, I may have taken your picture, and you can get copies on our Facebook page or on our blog page. If I didn't take your picture, it wasn't because I don't love you... I just snapped a few when I had a minute! All in all it was a great day, and I can't wait to do it again next year!!

I decided to spin the Specials around this week... With all the cold weather, I have been craving Chicken & Dressing, so we're gonna run that before the weather begins to warm up. I've actually never served it before in The Kafe, but since I got such rave reviews from you over the Holidays I know it will be a winner. It is delicious, my Mee-Maw's Cornbread Dressing recipe with lots of savory veggies and tender pieces of Chicken...I'm covering it in a homestyle gravy and serving J.J.'s Cranberry Sauce with it...

The Soup is also a warmer-upper, Chicken-Mushroom-Broccoli-Rice .... I ran it a few weeks back not thinking it was that wonderful, but I got more comments on this one than any of the others. So this recipe is a keeper.

The T.G.I.H (Thank God it's Healthy!) Special this week is a recipe I made up for myself to eat that features Albacore Tuna and sauteed spinach. It is both delicious and healthy. The Fish is a fresh Atlantic Salmon, pan seared in a three-berry glaze, and the Pasta this week will be smothered in an authentic Alfredo Sauce. The Corn Kobbler is on this week because I've had several requests... and a comment that said it was so good it should be a dessert.

The Dessert Special is Strawberry Kobbler, which was featured this week in The Birmingham News Article. You can also go to their website and get the recipe... it is super easy to make, and the taste is out of this world.

I'd like to leave you with some thoughts... I always try to share the things that God is teaching me through the process of starting a business and leading a team... This is not really about Kairos... it's just about me... but when you get set free from something, you just want to tell everybody so they can be free too!

I have lived most of my life waiting on a time that I could be truly happy. If you asked me, I probably never would have admitted it, but deep down, I have always been waiting to get to that "place" where I could truly be happy. At one time that "place" was owning my own business...done that... then it was being financially independant... getting there... most recently it has been when I get married and start a family.

Well, this week I had an unusual encounter with Jesus. I was listening to a Jeremy Camp song called "More than enough". I love Jeremy Camp and I know all his songs. This one I know by heart because I have sang it hundreds of times, but somehow, as I was worrying about things and reasoning things out, the words to this song just came "Alive" to me, and I realized that for me it was absolute Truth...

"Jesus...All of you is more than enough for all of me...You are more than enough for me.... more than all I know, more than all I see, more than all my hopes, more than all my dreams....All I have in you is more than enough..."

It was like the blinders came off my eyes and God caused me to see! I'm not waiting on a "Place" to be happy. I'm already there!!! It doesn't matter what I don't have or what I think I should have, I have to trust that God will give what I need when I need it, and in the meantime, He alone is more than enough!!

So, if you're waiting on that "place" to get to that'll make you happy, I encourage you to look around and see that you may already be there!

In the Old Testament, God revealed Himself to people with different names... when Moses asked Him what to tell Pharoah his name was, God said "Tell him that "I AM" sent you... that used to confuse me... "I AM"? Now it brings me great comfort because I have come to know what it means by experiencing a relationship with the Great "I AM" .... He is... always with me, and He is... always what I need at the present time.

Another name was "EL-SHADDAI" which meant "The God who is more than enough" I am so thankful that I opened my eyes and heart to that truth this week!
