Luscious Lemon Cake and Valentine's Plans...

What's up Folks,
                            It has been a very good week for us here at Kairos, and I am tired, but it is a good kind of tired, if you know what I mean. I have alot of information to share this week, including our plans for our 4th Annual Valentine's Day Extravaganza which is at the bottom, and also about the Concert we are having here on Sunday Night.
 
Our very own "Redemption Row" will be doing a free concert to help raise money for the people of Haiti. It starts at 6:00 p.m. this Sunday, January 31st. All of the proceeds will go to "Life Today Ministries" which is headed up by James & Betty Robinson. They are already on the ground in Haiti and have been there for some time helping dig new wells for the folks there as well as in other third world countries. This is just a small way for us to help, but every little bit counts. I am proud of Derek, Eric, Jonah, and Branden (the band Manager) for wanting to make a difference in the lives of hurting people... and these guys aren't even 20 years old yet! So, come on out and join us!
 
Last weekend I had the opportunity to make a Wedding Cake for one of my customers. When she booked her Wedding I told her that I was just starting to make cakes and that I didn't have it down to an exact art yet, but she said she wanted me to do it anyways because she loves our food...
 
Well, Sarah ordered a Lemon Cake with White icing & Lemon Filling, and it was my first lemon cake, so I messed around with it a bit in the weeks leading up to her Wedding, and the cake was delicious, and I spent all night friday piping on drapes & pearls... I was very nervous about doing it, but after my 3000th little pearl, I kinda got the hang of it... when I finally got the cakes to the Church on Saturday and began to stack them, they had a little lean going on... I tried everything I knew to do, but I couldn't get them to stand perfectly straight...
 
To make a long story short, she loved the cake, even though it wasn't perfect, and when her Groom put a piece in her mouth, she exclaimed "Oh, this cake is GOOD!" and that did it for me! It helped seal my cooking philosophy... food has to taste good before it looks good. It just has to. I'm all for presentation, too, but I've had alot of "pretty" cakes that tasted like cardboard, so in Honor of Sarah and Seth, we have launched a new cake at Kairos: "Sarah's Luscious Lemon Cake" and it will be on special this week. I know you will enjoy it!
 
I've also been messing around with Kobblers a bit. In my family we made Fruit Cobblers out of Biscuit Dough or Pie Crusts, but I have been infatuated lately with the old fashioned cobblers that are more like a cake. I had a very good one at Paula Deen's restaurant this summer in Savannah, and Lenora (our Dining Room Director) makes a peach one that is out of this world, so after getting her recipe, I have made up some of my own using this technique... (The Strawberry one Rocks)
 
Well, I thought, why couldn't I use this in a Savory Dish? This week I have a Special Veggie on Special: Kairos Corn Kobbler. It has a trio of corn in a creamy sauce on the bottom and a delicious buttermilk battered cobbler top... I hope you enjoy it!
 
The Soup is also a new thing I came up with based on a Kasserole that we make here... Chicken, Mushroom, Broccoli, & Rice. I know you're gonna love this one. The fish is also a new variation on one of my older recipes, Tilapia with a white wine cilantro sauce... I absolutely love this dish.
