What’s up Kairos Fans,
I hope all of you are beginning to get a little warmer! I love the cold weather for about five minutes, and then I’m ready for shorts and flip-flops again! The cold weather sure has gotten all of you into Kairos this week, though, so for that I am grateful. But I know we’re all ready for some warmer weather!

I have some news about breakfast: After a lot of thought, we have decided that it is not cost-effective for us to do Breakfast in Kairos Kafe because of the lack of demand in this area. I Love cooking breakfast food and coming up with new recipes, but it just never seemed to take off, so I apologize if any of you are disappointed. We will, however, continue to do breakfast Katering, and if you have a group that would like to meet here for breakfast, we welcome you! Just give us 24 hours notice.
It’s funny to me that if I ever go back to the original Vision for Kairos (that I believe was inspired by God) the only thing we were supposed to accomplish here was Lunch & Katering. And because of you guys, we have an awesome lunch business, and a growing Katering business that accounted for 70% of our sales in 2009! Thank You for helping us grow!
On another note, I got a message from a Lady on Facebook that really made me smile... she said that when she was eight months pregnant, she and her husband were looking for a “K” name... they were watching the news and saw that there was a new restaurant opening in Birmingham called “Kairos Kafe” and they both looked at each other and said “That’s our name!” His name is Kairos Goble, but they call him Kai for short. That was a blessing to me in many ways...His picture is below... The Specials this week are making me hungry... BBQ Chicken Baked Ziti, Fresh Salmon w/ a Honeymustard Glaze, Squash Kasserole, Coconut Pie, and a new soup recipe that I came up with called Black Tie Bean Soup. It has white beans, black beans, a savory ham broth, and a few other things... I hope you will enjoy them!

Over the Christmas Holidays, I spent some time with one my Aunt Glynis in Douglasville, Georgia. She gave me a recipe that she made up for creamed spinach, and I want to share it with you guys. It’s delicious (and nutritious)

Kairos Creamed Spinach

½ red onion, diced
2 tablespoons Extra Virgin Olive Oil
2 teaspoons cream cheese
1 tablespoon heavy cream
1 teaspoon fresh minced garlic
1 pinch fresh cracked white pepper
1 pinch sea salt
Preheat sauté pan, add olive oil, garlic & diced onions. Cook on high heat until garlic & onions start to become translucent. Add in the spinach, cream cheese, salt & white pepper. Sauté for about one to two minutes, stirring constantly until the cream cheese melts. Add in the heavy cream and simmer for about a minute, just until it begins to thicken up. Be careful not to overcook or the spinach will be mushy. Enjoy!
