Hello everyone, I'm Ginger, the Assistant Chef here at Kairos. James thought it would be good for you to get to know some of us better, so this week I am writing the e-mail.
I know firsthand what goes into each dish that is timely put together for each special customer who eats here at Kairos. If you've ever had our Stutzman's Southern Fried Chicken, well that's my specialty, anything that is deep fried or grilled I make it for you... the Fried Green Tomatoes, Grilled Chicken Tenderloins, the Porkchop Sandwich, and Steak Sandwiches... these are all what I have been trained to cook just like James does. He makes the recipes and I learn how to prepare them.
I'm truly blessed to be able to work with such dedicated and hard working people here at Kairos! They are truly working for the Lord. A lesson I've learned while working here is this: Don't worry about what you don't have but concentrate on what you do have, and be thankful and work with that. That is a great life lesson for all of us.
We've had a very successfull week here at Kairos with lots of regular customers and some new ones too! I heard a customer comment " that's the best Chicken Marsala I've ever eaten". These comments are what working at Kairos is all about. Customer satisfaction, and return visits to get more of a good thing! Kairos is God's special moment, so come and let Kairos be a part of your special moments.

The Caramel Pecan Fudge Cake is on Dessert Special again this week and it is truly the bomb! I know this one will definitely be around here for a while!

A blind boy sat on the steps of a building with a hat by his feet. He held up a sign which said: "I am blind, please help." There were only a few coins in the hat.
A man was walking by. He took a few coins from his pocket and dropped them into the hat. He then took the sign, turned it around, and wrote some words. He put the sign back so that everyone who walked by would see the new words.
Soon the hat began to fill up. A lot more people were giving money to the blind boy. That afternoon the man who had changed the sign came to see how things were. The boy recognized his footsteps and asked, "Were you the one who changed my sign this morning? What did you write?"
The man said, "I only wrote the truth. I said what you said but in a different way."
I wrote: "Today is a beautiful day but I cannot see it."
Both signs told people that the boy was blind. But the first sign simply said the boy was blind. The second sign told people that they were so lucky that they were not blind. Should we be surprised that the second sign was more effective?
Moral of the Story: Be thankful for what you have. Be creative. Be innovative. Think differently and positively.
When life gives you a 100 reasons to cry, show life that you have 1000 reasons to smile Face your past without regret. Handle your present with confidence. Prepare for the future without fear. Keep the faith and drop the fear.

Here's an Original Kairos Recipe for you to enjoy!
Kairos Corn Kasserole

1 can Sweet Yellow Corn
1 can White Shoepeg Corn
1 can Creamed Corn
2 pieces uncooked bacon, diced
1 cup mayo
2 large eggs
1 tablespoon heavy cream
3 cups soft bread crumbs *see note on the bottom
1 tablespoon Olive Oil
½ teaspoon minced garlic
Sea Salt
Cracked Black Pepper
Cracked White Pepper
½ Cup fresh Cilantro, chopped
Preheat a large sauté pan, and add Bacon, Olive Oil & Garlic. Cook on high heat for about 30 seconds, just long enough to get a good sear on all of it. Add in all 3 cans of corn and cook until the garlic starts to become translucent. Remove from the heat and transfer into a large mixing bowl. Add in Mayo, Eggs, and heavy cream. Mix together with a spoon until ingredients become uniform. Add salt & pepper to taste & fold in bread crumbs just until they are incorporated into the mixture.
Transfer mixture into a 9x13 casserole dish that has been sprayed with cooking spray or well oiled with oil or butter. Spread out evenly. Cover with aluminum foil and bake in a 375 degree oven for 30 minutes. Uncover and cook another 10 minutes or until the casserole browns. Top with chopped Cilantro.
Serve immediately or cover and keep warm until you want to serve it. Enjoy! (This Casserole can be made a day ahead and cooked when you are ready for it)
*I use leftover rolls from the Kafe to make my breadcrumbs, but any soft untoasted breadcrumbs will work (leftover rolls, biscuits, or any soft bread) I have found that Italian Bread Crumbs or Panko Bread Crumbs do not work well with this recipe.
