A recipe for your leftovers...and something I learned about Thankfulness...


What’s Up Guys,

                            I hope all of you had a wonderful Thanksgiving! I believe this year was the most successful one yet for us here at Kairos! Many thanks to all of you who let us help out with your culinary needs this year.

Although this year I didn’t spend the day with my family, I did spend it with my extended family here in Birmingham and I loved it. It was a great celebration, and I imagine that’s what it will be like one day when we are all together for eternity.

The specials this week don’t have any Thanksgiving flavors, so I hope you will join us in the Kafe. We do have some evenings left open for Christmas Parties if you are in need of a place to hold your events. My staff and I love to do Christmas parties in Kairos... it’s always a special time! And we are still booking for Christmas Katering if you need some help planning a menu, shoot me an e-mail, or call me after 2:30.

The Cheesy Chicken Baked Ziti is back by popular demand (Phyllis, I hope you are reading this), the soup is a delicious concoction of great northern beans, navy beans, and ham (It is delicious on a cold day), the veggie is sautéed sugar snap peas (one of my favorites), and the fish is a pan seared fresh steelhead salmon with a brown sugar & mustard glaze. I love the steelhead salmon because it has a richer color and the flavor is much more balanced to me than other salmon selections. Anyways, I hope you enjoy the food, and keep the feedback coming!

The coconut cream pie that was inspired by Helen Combs is becoming a regular on the dessert specials, and I had someone tell me this week “If you only did the coconut pie, then your desserts would always be a winner” I’m glad that you like it!

I have eaten so much turkey and dressing this weekend that I feel like I can’t have another bite, but I do have a neat casserole recipe that you can use to make something different out of your leftovers. It will be at the bottom if you want to try it out.

This Wednesday I will be cooking on FOX 6 sometime between 8:30 and 9:00 a.m. if you want to check me out.

I’ve had a lot of time the last two days to rest, relax, and reflect on the past year, and I’ve been thinking a lot about what it means to be thankful. I read something that really had meaning for me and I want to share it with you.

This question was posed to a doctor: “What would you tell someone to do if they feel a nervous breakdown coming on?” They were sure he would say consult a psychiatrist because that’s what he did for a living. His answer surprised them.

“I would tell them to close up their house, go to the other side of the tracks, and find someone that they could do something for...” he went on to say that a generous person who is not focused on themselves is rarely ever depressed... he also said that depression and negative thinking usually dominate us when we are self absorbed and that instead of enjoying life we will constantly be trying to “get back” something in life that we feel we have lost.

That got me to thinking... am I truly thankful for all the blessings that God has given me, or I am constantly trying to figure out how to “get something back” so that I can be fulfilled instead of looking for ways to make someone else’s life better?? I don’t know if many of you realize it, but it takes a lot of sacrifice to start a business from scratch, and many times over the past three years I have found myself in the rut of depression because of all the financial difficulties.

But, I have to say it’s true that when I focus on just growing Kairos and looking for ways to make someone else’s life better, then I seldom worry about what I am dealing with.

Maybe being truly thankful has more to do with just having a grateful heart and an attitude of gratitude. Maybe it means also extending a helping hand and being generous to others no matter what my circumstances are...

Kairos Thanksgiving Leftover's Kasserole

4 cups cooked turkey (or Chicken)


3 cups cooked green beans


1 family size can of cream of chicken soup


2 cups sour cream


2 cups Parmesan Cheese


1 sleeve Ritz crackers (crushed)


¼ cup unsalted butter (room temperature)


Sea salt


White Pepper


Dried Basil

Preheat oven to 350. Spray a 9x11 casserole dish with Pam or grease with butter.

In a mixing bowl add cream of chicken soup, sour cream, salt, white pepper, & Basil. Mix well and set aside.

In another mixing bowl add crushed Ritz Crackers and ¼ cup (1 stick) of unsalted butter and mix together well.

Arrange leftover turkey evenly in the bottom of the casserole dish, and pour cream of chicken mixture evenly on top. Layer green beans, Parmesan Cheese, & crushed crackers and spread evenly over the top. Cover with aluminum foil and bake for 35 minutes, or until brown and bubbly.

You could also use leftover green bean casserole if you have any leftover, and I like to top this Kasserole with Cranberry Sauce...the flavors are magnificent!

P.S. You could also jazz up a plain turkey sandwich by adding dressing, gravy, cranberry sauce, and provolone cheese...heat it up for a Pilgrim’s Sandwich that’ll blow your mind, and your tastebuds!
