Thanks & Gratitude



What's Up Guys,

                            Thanksgiving is almost here, and my staff and I have been having a blast in the kitchen, coming up with new recipes and putting new spins on some old ones. This is truly the best time of the Year for anyone who loves to cook! Thanksgiving always makes me remember my childhood, and the time spent with my family gathered around the preparation of Thanksgiving Dinner. On My Dad's side of the family, we did Thanksgiving together on Friday so that we could all be with our other family on Thursday. So really we had two celebrations. My Granny would always come up with something new and fantastic for us to eat, and on my Mom's side, my Mee-Maw would always stick to the traditional menu, and everything was always equally delicious! I believe I have paid tribute to both my Grandmother's this year by doing a little of both. I hope you enjoy the menu!

For those of you who will be ordering from us this year, I will open up Kairos on Thanksgiving Morning for Pickups until 10:00 a.m. Alot of my customers are also picking up on Wednesday with cooking directions for Thursday, so whatever your needs may be, I will do everything I can to meet them. I have also got some requests for smaller meals, and I am able to accomodate that as well. The Menu was geared for larger groups, but I will be happy to make a smaller menu for those of you who are having a smaller gathering. Just have your orders in by Tuesday if possible. I may be able to take orders on Wednesday, but at some point we may have to stop them. I want to do as much as I can, but I don't want to diminish the quality, so the earlier the better.

My Mom and I sampled the Dressing, the Cranberry Sauce, and the Gravy yesterday for lunch and it was off the hook! I added a little chicken to the dressing to make it a meal, and she said it was the best dressing she ever tasted. I have to admit, it was good! And if she didn't like it, she wouldn't be shy about telling me! And I am so excited about the pies that we are doing this year as well. Branden and I spent an evening perfecting the Pumpkin Pie Recipe, and the Sweet Potato Pie has the addition of a brown sugar crust with pecans. I'm excited about all of it! The Cranberry Sauce Recipe seems to get better and better each year, and I love making it from scratch.

Now that I am older, this time of the year makes me think of all that I have to be thankful for and for remembering where I am today and the Journey that has brought me here. Of course I am thankful for my family and all that they have added to my life, but I am also thankful for all those who are not blood related to me, but have become my family here in Birmingham. Our Church, Grace & Truth, began a tradition several years ago of eating Thanksgiving Dinner together at the Church for those of us who don't have alot of family here in Birmingham. It is truly a beautiful celebration as the Sanctuary of Grace & Truth becomes one Big Dining Room with one huge table running down the center with hundreds of people gathered around. I always see the beginning of it but I've never had the opportunity to stay because I always have to travel to spend time with family. This year my Mom and I will stay in Birmingham, and get to be a part of this blessing. If any of you don't have a place to go for Thanksgiving, give me an e-mail or a call and we'll set up a place for you.

I am thankful also for the loyal staff that I have at Kairos. I have been in this business all my life and I have always saw people come and go, but the core staff at Kairos remains with me year in and year out. That is truly a blessing, and a gift from God.

I am Thankful for the 1920 Club & Southern Pines in Gardendale for allowing us to provide meals for your people day in and day out and for allowing us to share in your own Thanksgiving celebrations!

Specifically, I am also thankful for each of you! It is easy to dream dreams and come up with ideas, but without people to support a dream then it is really only a puff of smoke. Thank you for supporting Kairos, Thank you for loving the food, Thank you for your comments, your input, your letters, your e-mails, phone calls, and your words to others. The other day I got an e-mail from a Lady who gave some very encouraging words about the service in the Dining Room... she ended her e-mail with ... "Thank You For Opening Kairos"

So I'll end this e-mail with some similar words... "Thank You For Supporting Kairos!"
